Water Main Break!!…

Hi there!  Happy Wednesday to you!  It’s hard to believe that it’s Wednesday already.  I feel like this week just started.  I’m not complaining though.  If this week wants to fly by super quick, that is fine by me!  I always look forward to the weekends anyway.  I guess that is normal though if you are unhappy career wise.  Hopefully things in that aspect will change.  Fingers crossed.

Anyway, yesterday was quite the interesting day.  The day started off like any other normal work day would.  I went to the bathroom around 11am and realized that the toilet wouldn’t flush.  I was the only one in the bathroom at this time.  I was thinking to myself what the hell is going on.  I heard what sounded like water running from one of the other toilets but I didn’t know what was happening.  I tried to wash my hands and realized the water just wasn’t working.  I went back to my desk and used hand sanitizer of course and noticed a bunch of my co-workers congregating.  That was right when we received an email that there was a water main break!  They said that they would be bringing in port-o-potty’s and that was when people really started getting mad.  I don’t know about you but the idea of using a port-o-potty at work really turned me off.

There were definitely going to be very unsanitary conditions if they allowed us to continue working.  People continued to talk and another 15 minutes went by and they sent out an email that the building would be closing.  I felt like I was a kid in school learning that we were being sent home early for snow or something of that nature!  It truly made my day!!  I couldn’t wait to race out the door.  Have you ever been sent home from work/school because of bad conditions?

It ended up being quite the perfect afternoon actually.  Melissa was around so we decided to head to Saladworks for lunch!

I am a member of their club that adds points every time you purchase something there.  I had enough points for one of our salads to be free!  So that definitely made me feel good.  They got a few new items to their salad choices which is great.  I had a salad with tuna, egg whites, guacamole and cucumber.  It was delicious!  It was a lot of protein and kept me full for a while.  After lunch we walked around the mall for a little while and then got Starbucks.  We sat in Starbucks for a while just talking and having a good time.

I was so glad that I was able to spend a nice and unexpected afternoon with Melissa.  We really had fun together and I was able to play with Oliver too which made it even better.  I love when unexpected good things happen like that!  It makes a crummy day that much better.  Once I got home, Mike and I went back out to see a house.  It was a pretty house but not in a good location unfortunately.

We are doing a lot of soul-searching in regards to our living situation.  We have a lot of factors to think about and we are running out of time to make a decision.  We are hoping to come up with solutions and back-up plans today.  I am confident that Mike and I will make the right decision on what we need to do at this point in our life.  The most important thing that is we are together and will find somewhere safe, clean and affordable to live.  I know that we will.

One thing before I sign off, can you believe today is 8 months that we have been married?!  I swear it will be a year before we know it.  I can’t believe how quickly these months have flown by.  Which really means, we are totally slacking on our wedding album.  We need to sit down this weekend and pick out the pictures already and tell our photographer.  I can’t believe we still haven’t done it.  My goal is to have it done by this weekend because he is going to start getting really busy next month with weddings and I want our album.

A Favorite City Of Mine!!…

Hi there!  Happy Tuesday to you!  I wanted to start off by saying that my heart absolutely breaks for Boston right now.  I cannot believe what this world is coming to.  It’s one thing after another anymore and it makes you scared to even walk outside your front door.  We shouldn’t have to live in fear when flying on an airplane, going to the mall, going to the movie theater, taking your children to school, and now running a marathon.  It’s awful.  My thoughts and prayers are with all of those affected by this terrible tragedy.

Boston is one of my most favorite cities.  I have fond memories of the few times that I visited Boston with my family.  It is a place that I have said to Mike numerous times that I want us to visit because he’s never been.  It hurt my heart to see this happening there.  I mean it would have hurt my heart to see it happen anywhere.  I feel like it gets more personal when you have been somewhere that something like this happens or even have people there who you care about.  One of my friends recently moved to Boston and my friend’s sister lives there.  I was happy to find out by social media that they were both okay.  It’s a very scary world that we live in.  I hope that they are able to bring those people to justice and give them what they deserve for what happened.  We can’t lose sight of the true heroes though.  All of those brave people who ran towards the explosions to help others.  Those are the people who should be celebrated and talked about in this tragedy.

It’s always hard moving on after something like this happens but I am now going to try to keep things light on the blog here for the rest of this post.  I told you yesterday about the crazy chicken caper at Sam’s Club.  Well here is the proud chicken itself!

I am so thrilled that we are able to now go back to the store and pick it up anytime we want.  I bet it would taste really good while it’s still hot.  Mike and I were talking about that yesterday.  So hopefully the next time we get one, we can eat it as soon as we bring it home for dinner.

We picked up a bag of these fries that I spotted at Trader Joe’s when we were there over the weekend.  We never tried them before.

These french fries have no preservatives in them which I love!  They are fresh-cut because you can actually see the skin on the potatoes.  I am a sucker for french fries so I’m willing and ready to try any new ones that I can find.  This bag was somewhat reasonably priced.  It was $2 but the bag isn’t that big.  I’m willing to spend that when there are no preservatives though because it saves my stomach the mess that it would go through otherwise.  We also roasted up some veggies and had a nice salad to start.

I cannot get enough of that chicken!  It really is so flavorful and moist.  I’m looking forward to eating more of it for dinner tonight.  Seriously, if you haven’t tried this chicken yet, you are missing out!

Are you member of any of the warehouse clubs?  I’d like to see what Costco is like.  We were members a really long time ago and I think we only went there once or twice.  I can’t remember what it looks like or what they have.  I have heard really good things about the store.  I think I am done getting warehouse memberships for now.  There really isn’t a Costco near me at all.  The closest warehouse clubs are BJ’s and Sam’s Club.

Check Out The Domain & Weekend Recap!!…

Hi there!  Happy Monday to you!  I hope all of you had a great weekend and that it was relaxing and not too stressful!  I have exciting news!  Did you check out the URL of my blog now?  I have officially bought the domain for withasideofhope.com!!  I am beyond excited!  I thought it was about time that I bought the domain for this site seeing as how I am approaching the blog’s three-year anniversary.  I can’t believe it’s almost been three years but we will get to that post when it happens.  I was so confused on how to buy the domain but after stressing last night and finally figuring out how to do it, I am proud to say it works!  Now I just need to get around to redesigning the old blog but that is quite expensive.  That will come in time.

Anyway, let’s recap the weekend, shall we?  How was your weekend?  What did you do?  On Friday, we had two turkey burgers left to prepare since we made two on Thursday night.  So all we decided to do was bake them this time.  It was pretty quick and simple to do.  They turned out great!  They had so much flavor.  Mike made the turkey burgers with just ketchup, mustard, salt and pepper.  It kind of reminds me of how McDonald’s hamburgers taste which is something that I always remember from childhood.

After dinner, we had to go to BJ’s so I could stock up on my Crunchmaster crackers!  I am obsessed with these crackers!  I love using them to scoop up chicken salad or tuna salad that I make for lunch.  I try to limit my bread intake throughout the day and stick to as many gluten-free items within reason that I can.  I really love those crackers.  They taste wonderful and they are gluten-free.  They add to the chicken/tuna salad instead of putting it on bread.  It’s a nice change.

We also stopped at JC Penney because they had flip-flops on sale for $1! The best part of this deal though was the fact that I had a 20% off coupon.  So Mike got 2 pairs of flip-flops and I got one and our total was a little over $2 for three pairs!  I was really excited about that!  Each pair came out to about 80 cents each.  That isn’t a bad deal if you ask me!  I could always use a pair of white flip-flops since they are the ones that get the dirtiest.

On Saturday, I woke up super early for some reason.  I just really can’t sleep in my house.  I think it’s because I am always on edge because of the people above us making noise. I never know when I am going to hear something slam on the floor or creak.  It’s really unnerving to feel that way in your own home.  We decided to grab a quick breakfast and then bring my car in for service. It was nothing major.  A part had to be replaced in the air conditioner/heater and it was under warranty so that was good!

After dropping the car off, we went to meet up with our real estate agent and looked at a bunch of houses.  Every house we saw was nice but they just weren’t for us right now.  So we are still searching.  I’m hopeful more and more houses will come on the market this week since it’s getting warmer out.  We are both keeping our fingers and toes crossed for good luck.

We decided to head to Bravo for dinner.  I love going there because the managers always remember me and treat us wonderfully.  We get really great service and excellent food!  You just can’t beat that.  I wish the restaurant was closer to us but it’s nice to go there every once in a while and know you are going to be treated in a kind manner.  I ordered their signature pasta dish, Pasta Bravo.

As we were walking out of the restaurant, Mike got a phone call from Russ (one of Mike’s best men from our wedding) and Kristen (one of my bridesmaids) that they were in town and wanted to know if we wanted to see them for a drink.  I was so excited to find out that they were home!  Luckily, we were only about 15 minutes away from where they were!  So strange!  We hung out for a little while catching up on everything.  I really enjoy talking to Kristen.  I always find that we can go weeks without talking or seeing each other but pick right back up where we left off from.  They are one of my favorite couples and I am so thankful that Mike has been friends with Russ since elementary school because it led me to meeting his wife Kristen.

On Sunday, I spent the day with Melissa and my mom.  We did some shopping and ended up getting excellent deals!  I was glad that I was back in gear with my couponing skills.  For a while there I wasn’t doing as well as I had been but I was right back in the game yesterday.  I had a lot of fun spending time with them and it was great to see Oliver.  I decided to get a membership to Sam’s Club so that we can get rotisserie chickens anytime we want!  It was fun to show Melissa and my mom the craziness over these chickens!  People were getting shoved and pushed out-of-the-way, all for a damn chicken! It’s crazy!!!  I’m happy to say that I ended up grabbing two!  One for us and one for my mom!!  YAY!!!

Last night was leftovers from Bravo for dinner for us and Mike and I shared this little gem of a candy bar that we picked up from Trader Joe’s on Saturday.

Fun Finds Friday: Vegetarian Edition!…

Hi there!  Happy Friday to you!!!  Yay, its finally Friday!  What are you doing this weekend?  I have to bring my car in to have a part replaced tomorrow.  I’m so thankful that it’s under warranty and that I don’t have to pay for anything.  That makes me a happy girl!  We are also looking at a bunch of houses tomorrow.  I’m hoping that we might find “the one” tomorrow.  We shall see though.  A lot of houses have been a huge letdown but I have a different kind of feeling about tomorrow.  Only time will tell!  I would also like to get to Trader Joe’s at some point this weekend.  Sadly, the closest one is about 30 minutes away from me.  I wish they would open one much closer.  It’s such a pain!  I’m jealous of all of you that have one very close to your home.

So today is another edition of Fun Finds Friday!  I missed last week because I was away. Today I want to feature fun vegetarian food items that I have noticed and think you might like!  Let’s begin!

Gardein Mandarian Orange Crispy Chick’n

This is a brand new product from Gardein, it’s Mandarin Chicken that you can find at any of your local Chinese restaurant except this is meat-free!  I think this looks so good! I bet it would taste great served on top of white rice.  All you have to do is throw it into the microwave and you are done!  It’s a quick, easy and healthy option for dinner or lunch!

Gardein Beefless Sliders

This pack of meat-free beefless sliders come in a pack of 4!  They are microwavable and sound quite yummy to me!  One slider with a bun is 150 calories.  I think this would make for a good option for lunch or dinner.  It gives those of us who want sliders meat-free a great option to have!

Morningstar Farms Mediterranean Chickpea Burger

This is a brand new burger that has just come out from Moringstar Farms!  This burger is made with chickpeas, spinach, Roma tomatoes, and traditional Greek herbs and spices.  Each burger contains 110 calories and you can throw this in the microwave to heat up.  This burger has 70% less fat than ground beef and it is a good source of protein!  I really want to try these!  I love chickpeas!

Morningstar Farms Buffalo Chik Patties

There wasn’t a picture for this new product.  I guess it is too new for it.  The description says it’s Buffalo-sauce flavor baked into crispy, boneless, veggie chik patties.  I think that sounds really good!  I am a huge fan of Buffalo flavored anything so I think I would really like it in pattie form.  I’d be interested to try it.

Amy’s has come out with a new bowl.  It is high in fiber, low in fat and calories, gluten-free and non dairy.  It also contains swiss chard and butternut squash.  This sounds like my kind of meal!  The bowl has 240 calories and would definitely fill you up for lunch or dinner!  Great option!

Traveling the 50 States!…

Hi there!  Happy Thursday to you!  I swear when I woke up this morning, I thought it was Friday.  It really does feel like Friday.  I think it’s because this week has been dragging so badly.  At least we are one day closer to the weekend and that is all that matters to me!  The weather has totally been crazy lately.  Yesterday it was 88 degrees!  The day before it was in the 80′s too and there was a huge storm last night that made the temperatures drop.  It’s in the 60′s right now but by the end of the afternoon, the temperatures are supposed to drop to the 50′s.  I think the weekend should be around the 60′s too.  I’d rather it be that temperature. I want to enjoy spring and not skip right to summer.  Last summer was beyond the point of hot and humid.  I think I’d enjoy having a spring for a while before we jump into those crazy temperatures and heat again.

Last night, Mike and I had all intentions of making turkey burgers however, my stomach was not having that.  I was having so much stomach pain last night that I wanted to keep things simple.  So we decided on our favorite go-to dinner, breakfast for dinner.  I love having breakfast for dinner.  Not only is it easy but it’s quick and that is the best thing when you  don’t feel like cooking or really don’t feel good.

So today, I wanted to talk about traveling and what states all of you have traveled to.  I find it so interesting to see where other people have been in the US.  On the way home from Oregon, Melissa and I were compiling a list of states that we have both been to.  For the most part we have been to the same states except for a few more that she has been to and I haven’t.  I eventually would like to see the majority of the US because I like seeing how other people live and there are quite a few things and landmarks that I would like to experience.  So here is my list of US states that I have traveled to:

  1. Pennsylvania (obvious one since I live here)
  2. New Jersey
  3. New York
  4. Massachusetts
  5. Rhode Island
  6. New Hampshire
  7. Connecticut
  8. Delaware
  9. Maryland
  10. Washington DC
  11. Virginia
  12. Florida
  13. Texas
  14. New Mexico
  15. Arizona
  16. Nevada
  17. California
  18. Oregon
  19. Washington (don’t know if this counts or not.  Melissa and I drove into Washington by accident when trying to find our hotel in Oregon, so technically we didn’t get out of the car).

So I’ve been to 19 states out of the 50.  Not too bad I guess.  I would like to see more.  As you can see the majority of the places I have traveled to has been on the East Coast.  What states have you been to?  Is there a particular state that you really want to see?  Which one?

Other places that I have traveled to that aren’t in the US:

  1. Quebec, Canada
  2. Tijuana, Mexico (when I was younger and we were staying in California, my mom wanted to see Mexico, and Tijuana was really close to the border.  That was a big mistake.  It was quite scary there!)

  4. Antigua

Looking at my lists, I am not very well-traveled.  I would like to see more places and experience Europe and see other Caribbean islands.  I really want to go back to an all-inclusive resort because I loved our honeymoon so much.  I’d like to try another Sandals resort and once we have kids go to Beaches.  I think all-inclusive is the way to travel especially for a foodie like me.  You are able to eat endless amounts of food and try as much or as little as you want.  I think that is perfect.  I love that.  Where else in the world have you traveled to?  Where do you want to see?

Monday Mornings!!…

Hi there!  Happy Wednesday to you!  The middle of the week is finally here!  Yay!  I am just so incredibly exhausted lately.  I even went to bed really early last night and I could barely wake up.  I don’t know what my deal is but I hope I can sleep in on the weekend.  It’s so difficult to sleep in my house anymore because of the people above us.  I’ve never heard people stomp around their house so much in my life.  Plus, their floor boards are not sealed down so all you hear is squeaking.  You could be fast asleep and as soon as you hear that squeak, you will immediately be woken up.  It’s not fun at all.  I hope I can mange to get some sleep this weekend because I feel like a walking zombie.

I completely forgot to take pictures of our dinner last night.  We made a pizza.  I did remember to take pictures of our dinner from the previous night, Monday night.  So I will share those for now.  I noticed at the supermarket on Sunday, that Annie’s Macaroni and Cheese was on sale!  I have always been a fan of Kraft but that is super unhealthy.  I’ve only had Annie’s once or twice before Monday night because it’s expensive.  I like the fact that it is made with natural ingredients and is made with organic pasta.  You can feel good about eating this because nothing is artificial like how Kraft’s macaroni and cheese is.

Yes, I got fun shaped pasta!  When I saw that they had a pig and carrot shape in the box, I knew I needed to get it.  I thought it was really cute.  Fun shaped pasta makes it that much more exciting to eat!  Well in my opinion anyway.  We served our macaroni and cheese with some chicken nuggets and roasted veggies.  It was a very kid friendly dinner.

That dinner definitely brought me back to being a kid or teenager rather.  I was obsessed with eating the chicken nuggets.  My mom would get them all the time.  It was so quick and easy to eat.  I remember Melissa and I would always eat them if we were in a hurry and needed to have something good for diner.  This was before Melissa became a vegetarian.  Whenever I see those chicken nuggets it always reminds me of my childhood or teenage years.  I like that about it.

Shifting gears a little bit,  I wanted to talk about a show that Mike and I have been hooked on.  The season finale was sadly on Monday but it still deserves to be talked about.  It is the show, Monday Mornings.  It’s on TNT.

The cast I think that they chose for this show is really talented!  There is Alfred Molina, Ving Rhames, Jonathan Silverman and Jennifer Finnigan (from one of my favorite sitcoms but was cancelled, Better With You).  It is a hospital set show based in Portland, Oregon (funny coincidence!).  It is similar to Grey’s Anatomy but I feel like it tugs at your heartstrings more and the situations are more real.  It’s a lot different from Grey’s in a way because I feel like it’s more realistic situations and doesn’t get as personal with the characters.  You do learn about the some personal aspects of the characters but it’s really focused on what goes on in the hospital and dealing with the patients.  I do love the dramas set in hospitals.  I watch Grey’s Anatomy too and back in the day I watched ER, and Chicago Hope.  I find those types of shows to be interesting.  Have you ever seen Monday Mornings?  Do you like watching hospital based shows?

I have a wide range of shows that I watch.  I do watch the dramas like I mentioned before and I like Once Upon A Time, Revenge and Rookie Blue.  I also watch a bunch of CW and ABC Family shows.  I watch the Amazing Race and Undercover Boss and I am a huge reality show fan.  I watch Teen Mom, The Real World, and the majority of the Real Housewives shows.  I used to just watch New Jersey, Miami, and Beverly Hills.  I added Atlanta this season and I just started watching OC.  What can I say?  I like watching my real Housewives.  I find it to be entertaining.  Do you watch any of the Real Housewives shows?  Which is your favorite?  I have to say that Beverly Hills and New Jersey are my absolute favorite.  Miami is my least favorite.

Mother’s Bistro – Portland, Oregon!!…

Hi there!  Happy Tuesday to you!  I hope your week is off to a good start.  Mine is okay.  It’s kind of stressful but I’m managing to get by.  Today is going to be quite busy for me.  I have to leave work two hours early today so that I can take care of some things after work.  Then tonight once Mike gets home from work we are looking at a house.  This house that we are going to be looking at is one that we had our eyes on and really wanted to see but unfortunately, it sold before we had the chance to see it.  Well, low and behold, the financing for the house did not go through so now it’s back on the market!  Could it be fate?  Perhaps.  So we are going to take a look at it tonight.  I’m looking forward to it.

Today, I wanted to talk about the most wonderful restaurant that Melissa and I had the opportunity to dine at.  This restaurant was Mother’s Bistro in Portland, Oregon.  This restaurant is located in downtown Portland and is very easy to get to.  The restaurant is owned by Chef Lisa Schroder.  She so graciously allowed us to dine at her restaurant and really enjoy our first night in Portland.  Her menu offers refined versions of traditional home-cooked dishes.  Lisa celebrates the cuisine of a different mother each month, referred to as the “Mother of the Month” (or “M.O.M.”) menu.  The restaurant has won several awards such as in 2002, Mother’s Bistro & Bar was recognized by Food & Wine Magazine as one of America’s Top Restaurant Bargains.  Lisa also has her own cookbook which was sold on QVC!  You may find it for purchase here.  Since some of my pictures didn’t turn out that great, I’m going to borrow some from the website because my pictures do not do the restaurant justice.

When you first walk into Mother’s you are immediately greeted with the most beautiful decor!  There are chandeliers hanging throughout the restaurant and it really does have that cozy bistro vibe.  You can tell that Lisa put a lot of time and effort into designing her restaurant.  Every piece of furniture to lighting was thoughtfully put together.

We were seated at a very nice private table off to the side of the restaurant.  Our waiter was excellent!  We both started with a glass a wine after our long exhausting day of travel.  I went with a Riesling and Melissa decided on Moscato.  While we were waiting for our drinks, we were brought out a basket of fresh buttermilk biscuits!

I dove in head first when I saw those big flaky biscuits.  Each bite I took was like heaven.  It was flaky and light but the inside was nice and fluffy.  I could have easily ate the entire basket.  I knew after trying these biscuits that we were in for a treat.

The menu has a wide variety of items to choose from.  It has that home-cooked comfort food vibe.   When I saw Matzah ball soup on the menu,  I knew that I needed to start off with a bowl of that.  I loved how she had that on the menu.  That is absolutely comfort food to me since Melissa and I grew up eating it.

The soup had fresh shredded pieces of chicken in it!  I love that they made the broth fresh from chicken.  It really added to the flavor of the soup.  She used lots of herbs and the matzah ball was huge!  It was light and fluffy just like you want from a matzah ball.  I really enjoyed my soup.

For my meal, I decided on the Roasted Free-Range Chicken.  My entrée was huge!  Melissa ordered the Vegan Stir-Fry!

The chicken was nice and juicy and slow roasted.  The skin had lots of flavor.  The mashed potatoes were by far my favorite item on the plate!  I loved that there were chunks of the red potato skin!  I absolutely love that in mashed potatoes.  They were creamy and the ultimate comfort food dish.  The zucchini was a nice addition as well.  It was cooked perfectly.

I really wanted to try dessert so badly but at this point we were both so incredibly stuffed.  I know that by seeing the desserts Mother’s offers, you could not go wrong with any of the choices they have!  Regardless if you order dessert or not, your meal is ended with a cookie for each of your guests which  I think is a nice added touch.

Mother’s offers breakfast, lunch, dinner, happy hours and cocktails.  There are so many options to choose from when dining at Mother’s.  I was so excited that Lisa gave us the chance to dine at her wonderful restaurant.  The only sad part is that she was out-of-town while we were there so we didn’t get to meet her.

I cannot say enough good things about this restaurant.  I absolutely fell in love with it while we were there.  If you ever travel to Portland and you are looking for an incredible restaurant to try, make sure you stop at Mother’s!  Thank you so much, Lisa for everything!
