Happy Birthday to Melissa!!!!!!!

Hi there!  Happy Friday to you and more importantly, Happy Birthday to my sister and my best friend, Melissa!!!!!!!!!  I know that I normally do a Fun Finds Friday post but I am going to skip that today since we have something to celebrate.  I am going to focus my post today on someone who means the world to me.  Someone who I can proudly call my sister and my best friend.  Someone who has been there for me my entire life and someone who loves and supports me each and every single day.  That person is Melissa!

When I was told that I was going to be a big sister, I think it was one of the happiest moments of my life.  I spent those 9 months watching my mom’s belly, and wondering what it would be like.  I wished and hoped and prayed that the baby in my mom’s belly would be a sister and not a brother to me.  I wanted a little sister to play with.  On May 3rd, 1988, I was at my grandparent’s house waiting for the phone call that we could come to the hospital so I could meet my sister.  I remember I was pacing the whole day until I was ready to meet you.  I remember dad telling me her name was Melissa and I couldn’t wait to hold her in my arms and see that she were real.  From that moment on, I instantly clicked with Melissa.  We were inseparable.  She was best friend I never had, and the sister I always wanted.  There were moments that we spent together tucked into my little twin bed watching Saturday early morning cartoons.  In those moments, I knew that she was something special.

Melissa and I have a bond that I just can’t explain.  We can look at each other and know instantly what the other one is thinking.  We connect on such a level that is amazing.  I am her number one supporter in everything that she does.  I care so deeply for her and want her to have a beautiful and incredible life like she deserves.  I am so proud of her for everything that she has accomplished so far and I know that she will accomplish more.

She is the one person that I can spend hours upon hours with in the supermarket just to get those couponing deals.  We are the couponing queens!  We love to bake and cook together.  We love just sitting on the sofa and gossiping or talking about anything.  We do have our moments when we bud heads but those are few and far between.  The good moments definitely outweigh anything else.

I wish for her birthday that she has the most wonderful day and gets everything that she hopes and dreams for.  I hope this 25th year is her best year yet!  I wish nothing but the best for her!  So Melissa, today we celebrate YOU!  I hope you have the most wonderful birthday yet!

Greek Yogurt Strawberry Banana Bread!!…

Hi there!  Happy Thursday to you!  I can’t believe it’s Thursday already but I guess that is what happens when you are out sick for two days and don’t feel good.  Hmm.  I’m still not feeling 100% today at all.  I was hoping and praying that I would.  I really think that I outdid myself with dinner.  I ate entirely too much in one sitting and my stomach hurt and everything just felt awful about that situation.  It was my mistake though so the only person to blame is me.  I learned my lesson for dinner tonight though.

We did try something new for dinner last night.  We had picked up the Perdue Simply Smart Gluten-Free Breaded Chicken Tenders to try.

PERDUE® SIMPLY SMART® Gluten Free Breaded Chicken Breast Tenders (11.2 oz.), Fresh

I  have been wanting to try them for a while but they have been rather expensive.  They were finally on sale so we were able to get them!  We both loved them.  They crisped up very nicely in the oven.  I made sure to ignore the directions on the package because Mike and I like them relatively crispy.  So I baked them for 10 minutes on each side and it turned out perfectly.  I would definitely buy these again.  I don’t think it was chicken that bothered me.  I think it was the fact that I ate way too many vegetables and potatoes and it just really did not agree with me.

After we were done dinner, I decided to make a recipe that I had seen on Pinterest.

Greek Yogurt Strawberry Banana Bread from this recipe

Ingredients:

1.5 cups whole wheat flour
1.5 tsp baking powder
1/2 tsp kosher salt
1/2 cup brown sugar
2 large ripe bananas
2 eggs
6 oz. Chobani Strawberry Banana Greek yogurt
1 cup diced fresh strawberries
Directions:
Preheat oven to 375 degrees. Start by combining flour, baking powder, and salt in a large mixing bowl.
In a separate bowl, mash bananas with a fork until they are gooey and liquid-like.
Add eggs and sugar and mix thoroughly.
Add greek yogurt
Whisk until everything is well combined and there are no lumps.
Pour the wet ingredients into the dry ingredients, and mix until just combined. At this point, fold in the fresh strawberries.
Pour batter into a greased loaf pan and distribute evenly.
Put into the oven and bake for 55 minutes, or until the top is golden brown and a toothpick comes out clean.
Transfer to a cooling rack and (try to) let the bread cool for at least ten minutes before slicing.

I kept debating with myself the entire time I was putting together this recipe if I was going to use the whole wheat flour or regular flour because whole wheat flour irritates my stomach.  I couldn’t figure out what to do.  I should have went with my gut instinct.  I should have used regular flour. I think the bread tasted great but I just prefer the taste of regular white flour as opposed to whole wheat flour.

I’m not sure how it would change the consistency of the bread to use the white flour.  I’m sure it would still work perfectly.  I think if I would make this bread again, I would definitely switch the flours.  Other than that, I really did like the flavoring.  It had a nice balance of strawberry and banana flavors.  I hate the crust of anything so I loved the soft middle of the bread.

What is your favorite type of bread to bake?  I love any kind of banana bread.  I’d like to try baking some blueberry bread.  I love breads.  I was just a little disappointed because of the whole wheat flour with this bread but it is still good and I’m sure it will get eaten in my home.

Pinterest Inspired Nails & Sick Couple Of Days…

Hi there!  Happy Wednesday!  Wow, I can’t believe it’s Wednesday and the last time I updated here was on Friday.  I am so incredibly sorry for all of that!  I do have an explanation and I wasn’t planning on not updating for so long.  I’ve been extremely sick the past couple of days.  I actually missed work on Monday and yesterday.  Today is my first day back and I was wishing that I was still home because I still do not feel 100% at all.  I think everything that I was feeling last week really caught up with me and now it’s a million times worse.  I will explain further into this post.  First let me start recapping the weekend.

On Friday, Mike and I decided to go to Olive Garden.  They had a deal where two people could eat for $25 and you can eat one entrée there and bring one home.  It was a great deal and we were also able to use a $4 off coupon that I had.  I forgot to take pictures. I decided to get fettuccine Alfredo which was a big mistake.  My stomach wasn’t liking that at all.  It was what I wanted though so I suffered.  Anyway, after that we went to Sam’s Club to pick up some produce items we needed for the week and then we went to Kohl’s.  I had a coupon and some money left on my gift card from my birthday so I picked up a shirt and two nail polishes.  I was pleased with my purchases.

On Saturday, during the day I relaxed most of the day and then I did some things around the house.  My mom and I went to Pei Wei for dinner.  It was my first time trying there.

This is the point where things got really bad.  I had been having swollen glands in my throat for a while and feeling very run down and tired.  All of a sudden my stomach hit me like a ton of bricks and I was sick the rest of the night from whatever I ate.  I didn’t think too much of it and I went home to relax.  Mike and I could do anything but relax because the people above us had about 25 people over for a massive party!  Just what we needed.  I couldn’t believe it.  Thankfully, we couldn’t hear anything in our bedroom and just locked ourselves in there and went to bed.

On Sunday, I was feeling worse but I dragged myself out of bed to run some errands with Mike.  I felt like my health kept deteriorating even more to the point where I felt like I couldn’t stay awake.  I was getting sweats and chills and I felt severely nauseous.  Well, one of my most embarrassing moments in my life came true on Sunday.  I ended up puking in public!  :(   Not my proudest moment at all.  Luckily, I made it to a bathroom but I ended up destroying the bathroom with my vomit.  Ugh,  sorry for the tmi.  I was beyond awful at this point.

I went home and rested the entire night.  I woke up on Monday and felt the same way and immediately made a doctor’s appointment.  He did a test on me and gave me some medicine.  I spent the rest of the day curled up on the sofa.  I did the same on Tuesday as well.  I still feel the same way and it’s been hard to drink and eat.  I’m trying as best as I can.  I really don’t understand what is going on with me.  It’s not fun feeling this way.  I certainly don’t want to throw up while I’m at work.  I’m hoping I will start feeling better today.  Fingers crossed.

Well, that is what has been going on in my life.  I really hope that all of you have had a much better couple of days than I have!

Fun Finds Friday: Frozen Dinner Entree’s!!…

Hi there!  Happy Friday to you!  I hope you had a good week and are ready for the weekend.  What are you doing this weekend?  I am doing family related things this weekend.  I’m happy to spend time with my family.  They are extremely important to me.  I also hope to pick up some items from the store that I wasn’t able to get this past weekend/week.  I am going through grape withdrawal.  I have been loving grapes lately and stupid me bought these massive globe grapes that contain seeds!  Ick!  I don’t know about you but when I eat grapes I’d prefer for them to be seedless.  It makes eating them that much better.  I also bought a package of strawberries which tasted terrible and I had to throw a few of them out because they grew mold from the time I took them out of the store till I brought them home!  I hate that.  I think I’m going to get two huge packages of both from Sam’s Club.  I know that Mike and I will go through them and they will taste a lot better than the ones that I picked up over the weekend.  So that is something I definitely need to do this weekend.

Last night, Mike and I tried a new bagged frozen dinner entrée.  It’s from a new company that I just saw in the supermarket.  So since today is Fun Finds Friday, I thought it would be a great segment to do today.

Mike and I both really didn’t care for this meal at all.  It lacked a lot of flavor.  It tasted very bland.  We couldn’t even finish the bag.  There was a lot there.   So I brought some leftovers to work for lunch today just because I didn’t want to throw it away.  So I will feature this company’s frozen meals first!

Tastee Choice Chicken Skillet Meals

As from the pictures, you can see the bag looks different from the one that I posted that I had for dinner last night.  I’m not quite sure why.  It might be a regional thing.  The chicken entrée’s come in 4 different varieties: Sesame Chicken, Chicken Stir Fry, Orange Chicken, and Chicken Parmigiana.  Like I had mentioned, I thought the Sesame Chicken was rather bland but maybe one of the other flavors would be better.  It’s still an option.

Zatarains Frozen Entrees

I had always heard and seen the commercials for the company Zatarians.  I’ve never actually tried any of their products before.  They have recently come out with their own frozen food line and these four entrée’s are their newest ones.  They are Big Cheesy Pasta, Big Easy Rice Bowl, Chicken & Mushroom Risotto, and Zesty French Quarter Style Pasta Bake.  I think these all sound interesting.  I’d be nervous to try any of them because of my stomach and the seasonings that are in them.  They all sound interesting to me though.  I’m sure the side dishes taste good too.

Joe’s Eat At Home Meals

The restaurant Joe’s Crab Shack has come out with their own line of frozen meals!  I’ve never actually eaten at a Joe’s Crab Shack.  The closest one to me is in New Jersey.  I’d be interested to see what the food is like.  As you can see they have quite a few entrees to choose from.  They have: Steamed Salmon w/Honey Dijon, Steamed Salmon w/Sesame Ginger Sauce,  Steamed Cod w/Cajun Lemon Butter Sauce, Steamed Mahi Mahi w/Tropical Salsa, Steamed Tilapia w/Shallot Dill Sauce, Parmesan Panko Shrimp , Sweet Chili Shrimp, Crispy Coconut Shrimp, Great Balls of Fire Appetizer, and Crab Dip Appetizer.  The actual meals contain fish, vegetables and a starch.  Meals are made with simple ingredients and no added filler or preservatives.  I would actually like to try some of these.  I think they sound good and they aren’t that bad nutritionally.

Barefoot Contessa Frozen Meals

I have always been a fan of Ina Garten, better known as the Barefoot Contessa from the Food Network.  She has just launched three frozen entrée meals: Shrimp Scampi & Linguine, Penne Pasta w/Five Cheeses, and Tequila Lime Chicken.  I think it’s awesome that she has come out with her own line!  I would most want to try the Tequila Lime Chicken.  I think that sounds great.  I couldn’t find a website to get more information but I have seen it in ShopRite and I hear Walmart carries it too.

I am not a fan of bagged frozen entrees.  I do like to keep a few healthy/decent ones around in the freezer just in case.  They make for a quick and easy option if we are in a rush or just don’t feel like cooking.  I am selective with which frozen products I buy due to my stomach issues and wanting us to eat as preservative-free and healthy as we can.  Sometimes with finances and with convenience these types of meals are the way to go.  To each their own!

Best & Worst Jobs for 2013!!!…

Hi there!  Happy Thursday to you!  I’m glad that Friday is just around the corner.  I think this week has flown by.  I guess its because I’ve been really busy and stressed this week and haven’t been feeling all that great.  I’m still feeling a little sick today.  I actually was able to sleep last night so I made progress there.  I’m still really tired though.  My throat feels a little swollen but doesn’t necessarily hurt.  I really think that it ‘s all due to the drastic changes in temperature.  It goes from being 70 degrees one second and drops to 40 the next.  It’s ridiculous!  I wish the weather would make up it’s mind so that people were getting sick or having allergy attacks.  But so is life.

Since I ate boring breakfast food for dinner last night (eggs and a bagel), I decided not to bore all of you with that because I post pictures of that dinner all the time.  I came across an article on Yahoo, that I thought would be interesting to share instead.  The company Career Cast came out with their annual poll of the Best and Worst jobs of 2013 which was posted on Yahoo.  You can find it here.  There were 200 jobs that were ranked by factors such as: income, stress, physical demands and job outlook.  The winners were in two categories, healthcare and technology.

The Top 10 Best Jobs for 2013 are:

1.) Actuary

2. Biomedical Engineer

3. Software Engineer

4. Audiologist

5. Financial Planner

6. Dental Hygienist

7. Occupational Therapist

8. Optometrist

9. Physical Therapist

10. Computer Systems Analyst

They say that Dental Hygienist make on average $68,000.  It is said to be known as a career that has a flexible schedule and low stress.  The Computer Systems Analyst is paid $78 ,000 and due to constant changes in technology, this job always seems to be in demand.

I find this to be really interesting.  My job is not on this list obviously and I’m not going to go into details about what I do right now just for privacy reasons.  I think this is an interesting list though. I think these are the things that kids entering their senior year of high school need to consider when trying to decide if they want to go to college or not and what they want to do.  You want to be able to get a good paying job that makes you happy when you get out of school.  That is ultimately the goal but sometimes in a lot of situations, that is not the case.  Take it from someone who knows.  But before we say anything else, let’s look at the next list.

The article says that Flight Attendants always had a stressful job but now due to restructuring in the industry, there isn’t a very good hiring outlook.  The article also says with Mail Carrier’s that more of their positions are being deleted rather than created.  Since all of the technology of communication is available, “snail mail” is low.  Their salaries are said to be $53,000 a year.  They also say that Newspaper Reporters was once considered exciting, however it is now a low-paying, high-stressful job with workers not knowing if their paper may consolidate or fold at any time.  People get more news from digital media as opposed to newspapers these days.

My job is not on the worst list either.  I don’t know if I agree with that or not.  Heh.  ;)   What do you think of this article?  Do you work in any of jobs that made either of these lists?  Do you agree or disagree with the jobs listed and what the article says?

Busy As A Bee!!…

Hi there!  Happy Wednesday to you!  I am glad that we’ve reached the middle of the week already.  I apologize for falling off the face of the earth yesterday.  I had all intentions of posting but life has gotten pretty busy lately.  There is a lot of stuff going on in relation to finding a place to live and some private family matters that has gotten me very stressed out and busy.  I had mentioned that on Monday I wasn’t feeling that great.  Well while I was at work, it progressively got worse.  I was starting to feel extremely nauseous and my throat was very swollen and tender.  I kept sneezing, and I had a fever and felt so tired and run-down.  Instead of leaving work early, I stuck out the entire day which probably wasn’t the brightest idea to do.

After work, I went to Melissa’s house to help her with a few things.  We left the house to run some errands and then came back to finish up some things.  Then I ventured home.  I didn’t even have enough energy to want to cook dinner.  So I grabbed the only can of soup I could find in the pantry and made that along with a sweet potato for dinner.

The soup was actually really good and I was glad that it didn’t contain preservatives or leave my belly feeling worse than it already felt.  I ended up just lounging on the sofa the rest of the night praying that I would feel better on Tuesday.

When I woke up on Tuesday, I did end up feeling better.  My throat didn’t feel as tender and I didn’t feel as run-down and tired.  I made it through the day.  I ended up going out to dinner with my both of my parents together.  This is something that I wanted for a long time.  Did it go like how I imagined it?  No, not at all.  I need to come to the realization that my parents are just not going to be together ever again.  That is really hard for me.  I guess I thought it would be okay but it was kind of awkward and uncomfortable at times.  I was thankful to be sitting there with both of them but it was just a strange experience.

We went to Ruby Tuesday.  I decided to order fish tacos with the salad bar.  Bad idea!  The fish tacos were good but SUPER spicy!!  My stomach was not a fan!  I was angry that my stomach did that to me because it was tilapia and it tasted good.  I learned my lesson though.

I had a horrible time sleeping last night.  I didn’t sleep at all.  I think I might have slept for 5 minutes at the most.  I don’t know why I couldn’t sleep.  It was really bad.  I woke up this morning with terrible pains in my stomach, feeling nauseous and my throat feels swollen again.  I don’t get it.  I think it might be bad allergies but who knows at this point?  I’m going to keep a close watch on things and if I’m not feeling better in a couple of days, I might need to make a trip to the doctors.  I would like to avoid that at all costs but I’ll see what happens.

Sweet Lemon Glazed Drumsticks & Homemade Brownies!!…

Hi there!  Happy Monday to you!  I can hardly believe that it’s Monday already.  This weekend literally flew by faster than I can believe.  I am so exhausted and I actually was able to sleep this weekend.  I’m not sure what is going on with me and today I woke up and my allergies are really bad.  I have a lump in my throat.  I’m hoping it will go away.  I see a lot of hot beverages like coffee and tea in my future for today.  I pray it’s just allergies.  I don’t need to be getting sick right now.  There is way too much going on right now for me to be coming down with something.  I’m going to try very hard to drink a lot of liquids and stay hydrated and get rest.

Anyway, how was your weekend?  I’ll start recapping mine by going back to Friday.  On Friday, I picked up Melissa and we ran some errands that we both wanted to do.  We went to a few stores and the mall and then we picked up dinner.  We ordered from a local Italian restaurant, which is one of my new favorites.  It’s super cheap, they give you a ton of food and it tastes great.  How can you go wrong with that?  I don’t see how.  I forgot to take pictures.  Melissa, my mom and I spent the rest of the evening sipping coffee and glued to the television watching the manhunt of the Boston marathon bomber.  I couldn’t believe what was transpiring before my eyes.  I was glued to the television and twitter for non-stop updates.  It was crazy!  I am just so thankful that they caught the guy but we still don’t know if anyone else was/is involved and that is what makes me so nervous.

On Saturday, Mike and I went to see two homes.  The one was absolutely disgusting and looked like it was a really bad development and Mike couldn’t even stand in the basement, that is how low the ceilings were.  It was awful.  The second one we saw felt like a dorm and we couldn’t picture ourselves living there.  We have done a lot of soul-searching and we are still contemplating what we are going to do.  We have to be out of our current condo by the end of June.  So that is very stressful.  I will speak more about that in another post.

After looking at houses, we came home for a little bit and I prepped dinner and let it marinate in the refrigerator.  We then went out to Aldi, and stopped at a few other stores to pick up some items.  We got back home and started on dinner that I had marinating.  Last week two of my favorite food bloggers posted recipes that I was dying to try out.  I thought what for a better night than Saturday night.  So Mike and I made dinner and dessert together.  First up, dinner!

Sweet Lemon Glazed Drumsticks from Recipe Girl 

Ingredients:

12 chicken drumsticks (skin-on)
1/2 cup freshly squeezed lemon juice (about 4 medium lemons)
1/4 cup Dijon mustard
2 tablespoons extra-virgin olive oil
2 tablespoons chopped fresh herbs (oregano or thyme- or both!) (**I used both dried herbs)
2 tablespoons honey
2 tablespoons apple cider vinegar
1 tablespoon grated lemon zest
1 tablespoon packed light brown sugar
1 teaspoon minced garlic (1 medium clove)
1 teaspoon salt
1/2 teaspoon freshly ground black pepper

Directions:

Rinse the chicken and pat it dry. Lay the drumsticks side-by-side in a 9×13-inch glass dish that has been sprayed with nonstick spray.

In a medium bowl, whisk together the remaining ingredients. Pour the marinade over the chicken and turn it to coat completely. Cover the dish with plastic wrap and refrigerate for 1 hour (or up to 4 hours). Turn the chicken every once in a while to reincorporate the marinade ingredients.

 

Preheat the oven to 375 degrees F.  Drain the chicken from the marinade and transfer it to a roasting pan (or you can choose to bake it in the pan with the marinade). Bake for 50 to 60 minutes, or until the chicken is tender and juices run clear when pierced with a fork.

We also roasted some veggies and I let two sweet potatoes bake in the oven for the same hour that the chicken was roasting for.  Sorry for the below picture.  It is an iphone picture because I forgot to take a picture with my actual camera.

The chicken was so moist and flavorful and it literally fell off the bone!  The lemon glaze sauce was absolutely delicious!  Mike and I both agreed that it would taste wonderfully over chicken breast or a whole roasted chicken.  I absolutely love Lori’s recipes and I am so excited that her cookbook just came out!  I need to get my hands on that!

Another one of my favorite food bloggers who also has a cookbook posted a recipe for brownies the other day that looked amazing!  So Mike and I tried our hands at making this for dessert.

Homemade Box Mix Style Brownies from Picky Palate

Ingredients:

1 stick unsalted butter, partially melted
2 tablespoons vegetable oil
1 1/2 cups granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
1/2 cup all purpose Gold Medal Flour
1 cup unsweetened cocoa powder
1/4 teaspoon kosher salt
1 teaspoon baking powder
1 cup mini chocolate chips

Directions:

Preheat oven to 325 degrees F. and line a 8×11 inch baking dish with parchment paper sprayed with cooking spray.
Place butter into a large mixing bowl and microwave until partially melted. Add sugar and oil, mix until well combined. Stir in eggs and vanilla stirring until combined then add flour, cocoa powder, salt, baking powder and chocolate chips. Stir until combined and thick.
Transfer batter to prepared baking dish, spreading evenly. Bake for 35-40 minutes, until baked through. Remove and let cool completely, about an hour. Lift parchment and brownies out of pan and cut into squares to serve.

These brownies were some of the best I ever tried in my life!  My stomach was not happy by them.  I think it was too rich for me but Mike LOVED them!  They were so fudgy and moist.  I really liked them a lot.  It was great to make them ourselves.  It was overall, a delicious dinner followed by an even more delicious dessert!

On Sunday, I went out with Melissa and my mom.  We had some errands to get done together and then went food shopping for the week.  I bought a pizza that I wouldn’t normally get because with the sale and coupons it came down to $2.00.  So Mike and I decided to try it for dinner last night.

It was one of the best frozen pizza’s that I ever had!  It was fluffy and really tasty.  Was my stomach happy by this?  No, but I sometimes want to eat things that I want to eat so I just deal with it.  It was really good.  Do you like frozen pizza?  What is your favorite kind?
