Hi there! Happy Thursday to you! Thank you for the sweet comments on my blog anniversary post! It’s still hard for me to believe that I have been blogging for three years. It certainly doesn’t feel that long but it makes me really happy that I have been doing something that I love for the past three years. This blog is more than a hobby. It’s something that I look forward to updating everyday. It’s become a part of my life and I am so thankful and happy of all of you that have been following along!
Let’s get to my post today! I have another great recipe to share with you. Who am I with all of these new recipes in one week? I’ve been on such a ranch kick lately. I don’t know why but I think those ranch packets just boost the flavor in anything you put them in. I know they aren’t the greatest thing and I should probably try making it on my own but I’ve been looking for quick and easy recipes for this week and these packets have really made my life easier. I noticed this recipe a few weeks ago and meant to try it but I kept forgetting to pick up a jar of pesto sauce. I finally had a jar and I could make it!
Pesto Ranch Crockpot Chicken adapted from this recipe
1 pound of boneless skinless chicken (whichever cut you prefer, I used tenderloins)
1 jar of pesto sauce
1 packet of ranch seasoning
1 can of low-sodium chicken broth
Place chicken at the bottom of the crockpot. Spread jar of pesto evenly across the chicken. Then toss the ranch seasoning packet over top of the chicken. Add the chicken broth. Cook on high for 3-4 hours or low for 6-8 hours.
The sauce on this chicken was unbelievable!! The pesto, ranch and chicken broth came together and made a really flavorful sauce! The chicken broth thinned out the pesto sauce which I really liked. It was so flavorful and the ranch seasoning stood out. I loved it! I would have liked to serve it over pasta but I just didn’t really have the time to start making it because I was doing a bunch of other things at once.
I do think it would taste great served over the pasta. The sauce was good enough to be a pasta sauce. You could even serve it with rice and let the sauce soak up in the rice. Unfortunately, I didn’t make enough chicken for us to have for another night. I do have leftovers for lunch today. Next time, I will use thicker pieces of chicken, like chicken breasts and use more. I have plans to serve it over pasta too. I highly recommend making this if you are looking for something quick and easy to make for dinner.
I love using the crockpot and I’ve been using my Ninja lately. I feel like the Ninja cooks the food much better than my regular crockpot. Do you like using the crockpot? What is your favorite crockpot recipe?
