Spinach, Mushroom & Cheese Omelette Making!…

Hi there!  Happy Thursday to you!  I apologize for not posting yesterday.  As I had mentioned, I took the day off from work so I could get some things done that I needed to.  I had such a nice day yesterday.  Not only was the weather beautiful but Melissa was able to spend the afternoon with me as well.  It was a much-needed break and I’m loving this short week!  I think every week should be short like this except now I have a ton of work to do today at work.  At least I’ll be busy though and I love those kinds of days.  The day just flies by!

So I had some things to do in the morning that I had to take care of and once that was done, Melissa and I went to Wegman’s for lunch.  They had a decent selection of things and I got the most random container of food for lunch.  I was really craving sushi and I don’t know why I didn’t get it.  Instead, I got a few other random things and I think I would have felt more satisfied with sushi and my stomach probably would have thanked me for that decision as well.  Oh well.  Once we were done with lunch, we went to the mall.  I can usually never find anything when I go to the mall, let alone good sales.  Melissa helped me find some amazing deals and I think I will share them with you tomorrow.

I ended up getting three dresses for very reasonable prices.  I got one dress on impulse because I saw the color and the style and I fell in love with it.  It’s a versatile dress.  I can wear it casual with a cardigan or jean jacket over it to work or just around or I can dress it up and wear it to somewhere special.  I love that about this dress.  I just can’t get over the color.  It’s a total me dress and if you know anything about my favorite color, which you could probably tell from my wedding colors, yes, it’s purple!!  ;)  I also got a beautiful black dressy dress to wear to two weddings that I have coming up in a couple of months.

Then the last dress was a maxi dress!  I’ve been searching everywhere for a maxi dress that I can wear with flip-flops or cute sandals but every dress I hold up to me is massively long and I’m pretty short.  I finally found the perfect maxi dress and got it for a super deal.  I wish I could have got two of them but maybe it will go on sale again this weekend.  One can dream.  I’ll share the dresses tomorrow.  After the mall, we stopped at Ulta so Melissa could get a few makeup items that she needed and then we went back to her house for a little bit.  It was such a great day!

When I got home, Mike and I both decided that it was going to be an omelette kind of night.  I’ve been on an omelette kick lately and I love cheese omelettes but we both decided to change things up a bit and add different ingredients to ours.  Mike made a mushroom, spinach, pepperoni and cheese omelette.  I am not a fan of pepperoni so I didn’t use that in my mine.  I decided to make a spinach, mushroom, and cheese omelette.  The perfect combination in my opinion!

I first cooked up the spinach and mushrooms so that the spinach would wilt and the mushrooms would get nice and tender.

Unfortunately, I got stuck using the larger skillet that we have so my omelette didn’t come out looking as pretty as it normally does when I use the smaller pan.  We really need to purchase another pan that is smaller.  It’s on our list of things to do.  I also like my eggs overcooked. I know, I’m weird!  I have to see brown or crispy edges on my eggs.  I’ve always loved them that way.  I’d rather them be overcooked than raw!

It was the perfect comfort food dinner for sure!  I love having breakfast for dinner and I cannot say that enough!  It really tastes great and it so comforting to me plus it’s kind on my tummy!  I forgot to mention once the omelette was halfway cooked, I added a slice of American cheese and then folded it over and flipped it.

What is your favorite kind of omelette?  How do you prefer your eggs?  I also really like cheddar cheese or swiss cheese in omelettes.  Yum!!  I like twice over eggs a lot.  I usually make those if I am not making an omelette but like I’ve mentioned, I’ve been on the omelette kick lately.  They are good!
