Hi there! Happy Wednesday to you! The week is almost half over! Woohoo! Today is such a dreary day. It’s supposed to be bad around the Northeast today. It’s raining and very cold which means it’s probably going to turn into ice. There are other parts of the Northeast that are supposed to get ice and accumulating snow. I wish we were getting accumulating snow. It’s been a very long time since we have had a big blizzard. I think we are due for a huge blizzard this year. I’m keeping my fingers crossed! It would be nice to have at least one snow day. Do you like snow?
So for dinner last night, Mike and I decided to use the Ninja Cooking System to make things a bit easier and faster. Over the weekend, I had bought a huge package of chicken thighs that were on sale. The package was massive and it was only $4. I’ve never had chicken thighs before so I didn’t really know what to expect. A downfall of buying them was that there were bones and skin on it. That didn’t bother me all that much. I wanted to keep things light and simple. So I decided to use the Land O’ Lakes Saute Express seasoned butter again. You can find the previous time I have used the butter here. This butter really gives the food a great flavor so I was happy to use it again.
We melted two packages of the butter in the Ninja and then placed about 5 or 6 chicken thighs in the butter sauce. We let it cook for about 20-3o minutes. When it was almost done cooking, we added a bag of fresh spinach. Once the spinach was wilted and the chicken was cooked, we removed it from the Ninja. We then placed in some fresh green beans and let them steam in the sauce for about 10 minutes. Before we knew it, dinner was ready! I also made us some baked potatoes which I cooked simply in the microwave.
The flavoring from the Saute Express is really incredible. It gives anything you cook in it a ton of flavor. I bet it would taste fabulous on a piece of fish! I must try that next. It really made the spinach and green beans taste great too. I don’t know if I am a big fan of chicken thighs though. I peeled the skin off which kind of grossed me out. I also didn’t like that there were bones. I think I might just put the rest of the thighs in the crockpot and let them slow cook. I think that will help them fall off the bone and will make for tender chicken which can be used in any recipe.
While we were making dinner, I was also preparing my lunch for today and for the rest of the week. I saw a tip on my favorite site, Pinterest that I wanted to try! It’s no secret that I am obsessed with Pinterest. I find so many amazing tips, recipes, and ideas that I cannot wait to try out! When I saw this idea, I knew I had to try it for myself to see if it was really true.
Baked Hard Boiled Eggs
Preheat the oven to 350 degrees
Place the amount of eggs that you want hard-boiled in a muffin tin
Let the eggs bake in the oven for 30 minutes.
While the eggs are baking prepare an ice bath for the eggs to cool down in once they are out of the oven.
When the eggs are out of the oven, be careful when removing them. You might want to use a spoon or something of that nature to scoop them up. I stupidly, used my fingers and burned most of my finger tips. They are okay today but it did hurt! Then place the eggs in the ice bath and let them cool for at least 10 minutes before peeling them.
I couldn’t believe how simple this was to do! The eggs were completely hard-boiled! They were pretty easy to peel the shell of too. Some of my eggs had brown spots on them because I think they might have gotten burnt from the position of the rack in my oven. The next time I will raise the rack. I think it was a little too low. Make sure that your oven rack is closer to the middle or put the eggs on the top rack. The higher they are from the bottom, the better.
I was so excited that this actually worked! I’m now stocked up with hard-boiled eggs for the week! I tried my hand at making egg salad for lunch today so we will see how it turns out. I’m glad that this is an easier way to boil eggs. I’d rather throw them in the oven and not worry about it instead of watching it on the stove. So easy!
