Hi there! Happy Monday! Well this weekend sure did fly by quickly! I hate when that happens. It seems like you blink your eye and the weekend is gone. It takes so long during the week to get to Friday and then the weekend just disappears. The weather was supposed to be amazing this weekend and it wasn’t. It was still pretty cold and it’s been really foggy since yesterday. Today the fog was so bad driving to work. It was really quite scary. It’s the scariest thing when you can’t see what is ahead of you from the fog. I don’t like that feeling at all. I don’t mind that the weather wasn’t warm. It is January after all. It’s supposed to be cold. Anyway, how was your weekend?
On Friday, Mike and I really didn’t feel like doing all that much. We just wanted to spend time together since he just got back from his business trip late Monday night. So we spend the evening relaxing at home. We decided to try a Gorton’s Fisherman Skillet Crisp for dinner.
There are two varieties of the Skillet Crisp meals: Classic Seasonings and Garlic & Herb. We tried the Classic Seasonings. You just place the filet in the skillet and let it cook for I believe 18 minutes or so. We decided to keep things simple and just have some french fries because my stomach was not a happy camper and I didn’t want to push it by eating vegetables.
We both loved the fish! It was perfectly crisp on the outside and nice and flaky on the inside. It had a nice lemon seasoning to it. You couldn’t even tell it was fish. It didn’t taste fishy at all. I really liked it and would most definitely buy this again. It’s a little on the pricy side but you do get 4 fillets of fish in the package. So that is a good deal to me.
We finally caught up on some shows on the dvr but we still have a lot to get through. Well, most of them are my shows. So I should say, I have a lot to catch up on.
On Saturday, I woke up really early to go get blood work done. I needed to get more testing done that was done before for my stomach. So we shall see what happens with that. It took a really long time with me waiting since I didn’t have an appointment. At least I got taken though and that was the most important thing. I came home and waited for Mike to wake up. Once he did, we went to our favorite bagel shop and stocked up on bagels and each got a breakfast sandwich. I really love the local bagel shops. They are so much better than a chain. This particular bagel shop has amazing coupons. If you buy 12 bagels, they give you 6 for free! So you get 18 bagels for the price of a dozen. We have been doing that lately and we freeze the bagels. It typically lasts us almost a month! I love it.
We ran a few errands and then we came home to get ready to go out to dinner with my co-worker, Tarra and her husband Sean. We decided to go to PF Changs for dinner. Before going to PF Changs though, we stopped at ShopRite so I could do a deal! Boy, this was my best deal to date! I ended up getting 4 boxes of cereal and container for Silk Almond Milk for free!!! Yes you heard me correctly! Everything was FREE!!! I had coupons for all of the boxes of cereal and the store is still doing triple coupons. I also had a coupon for the milk. The cereal was super on sale. So I ended up getting overage from the cereal which covered the cost of the milk. If I didn’t end up getting the milk, the store would have owed me almost $3! Not a bad deal if you ask me.
After our incredible shopping deal, we arrived at the restaurant for dinner. Mike and I decided to do the Changs for Two menu which worked out to our advantage. We both started with Egg Drop soup.
In addition to the soup, it also allowed you to share an appetizer. We decided on steamed vegetable dumplings.
For my meal, I ordered Almond & Cashew Chicken. My first time trying this dish!
I loved it except for the fact that I forgot to say no green bell peppers. I picked around them. My belly hates them so I made sure to steer clear of those peppers. Next time, I would order it without the peppers and I think there was WAY too much sauce. I was brushing it off the chicken. I think it was a good dish though. We were both able to choose a mini dessert and we both decided on tiramisu. It was a delicious dinner! I had fun spending time with Tarra and her husband.
On Sunday, it was my mom’s birthday!!!! Melissa and I had a few things to pick up before we started our mom’s birthday celebration! We had so much fun together getting things ready. We couldn’t wait to celebrate! Once we got things together we brought them to their house and then I went back to my house to get ready to go for dinner. Mike and I picked up Melissa and my mom and we went to Red Lobster to celebrate!
Of course I couldn’t wait for those biscuits! I haven’t had them in so long!
I decided to order shrimp from their new 30 shrimp for $11.99 menu!
There was way too much food! I definitely had to bring it home. I haven’t had anything fried in a really long time and I was nervous about eating the fried shrimp but I wanted to try their new dish. I knew it was going to bother my stomach but sometimes I just want something so I eat it anyway. I was right though. My belly was not happy.
After dinner, we went back to their house for cake!
My mom is obsessed with butterflies and always has been for as long as I can remember. We always make sure to incorporate butterflies into everything we do for my mom’s birthday. I love that every time I see a butterfly, I think of my mom! It’s sweet. I think they did a wonderful job with the cake and it tasted even better! We got it from BJ’s and they really did a good job! The cake was a gold cake with vanilla mousse inside! So good!
Overall, it was a pretty good weekend! I’m sad that it went by so quickly! Have a great Monday!
