Hi there! Happy Wednesday to you! I’m glad that it’s the middle of the week already. I still have so much to do before Friday. I really hope I can get it all done. It’s making me very stressed out. Tonight Melissa and I will be getting ingredients that I don’t have for the treats that we are baking and then we are going to bake them. I hope we can get it all done. Then tomorrow after work, I have to pick up gifts for my supervisor since I am the one that does it every year for my team. I usually collect money from my team mates and then I go out and get the gift. We are doing things a little differently this year. We usually get him a gift card but we are going to get a physical gift this year. Which means I have a few stores to go to so I can get the perfect gift. So needless to say, I’m pretty stressed out. I hope I can get everything done. I think I will.
Last night I decided to keep things pretty simple with dinner. My stomach was not feeling well at all. Mike actually made dinner for me because I felt like I couldn’t stand to cook. He made me twice-over eggs and a toasted blueberry bagel.
I love eating breakfast for dinner. I am a huge fan of breakfast food so eating it any time of day is fine by me. Mike feels the same way which is a good thing. I couldn’t figure out what I wanted to put on my bagel though. So instead of deciding on one thing, I decided on two. One item on each side of the bagel.
I decided on two of my favorite items in the world! I love my Earth Balance “butter” and I love the Plain & Fancy Apple Butter! To make the best of both world’s, I used both and let me tell you, it was a great decision. What do you like to put on a bagel or toast?
I have a few things that I like to put on bagels or toast in addition to the Earth Balance and Apple Butter. I love vegetable cream cheese. Vegetable cream cheese is my absolute favorite kind of cream cheese. I am also a fan of strawberry cream cheese.

I do like the occasional jelly on my bagel or toast but it has to be grape jelly! I don’t like any other type of jelly as much as I do grape.

I don’t know how I’ve gotten so picky but that is what I like and I’ll stick with that. It makes me a happy girl. I like all different types of bagels too. I’m not picky when it comes to types of bagel. If it’s a bagel, I’ll pretty much eat any kind because I’ve grown up eating bagels. When I was younger, it was a family tradition that on every single Sunday, we would get together with my grandparents and go to our favorite bagel shop/restaurant for Sunday breakfast. Of course our parents and grandparents would order bagels and lox. While Melissa and I took a dabble with that on occasion but we usually would stick with a bagel and cream cheese. I really miss those days. Looking back on it, I wish I would have cherished the moments with my grandparents more. It’s been a long time since I’ve had grandparents around and I truly miss that.
Alright, well I don’t really have all that much to talk about today so instead of rambling on tangents, I’m going to sign off. Hopefully I will be back tomorrow with some baked goods pictures and recipes! Have a great Wednesday!

Aww, what a sweet family tradition you had with your parents and grandparents. I know exactly how you feel about missing your grandparents — there’s just a hole without them. I’m glad you have the special memories to help fill that void. <3
Thank you!
There definitely is a hole but you are right, those memories will be there forever and that is the best part.
I love apple butter! I’m also a big fan of lox and cream cheese
Yay! Another apple butter fan!
I used to love that growing up. I haven’t had it in years.
I need to eat breakfast for dinner more often! Not sure why I don’t do it?
You should! It’s so comforting
