A Crockpot Dinner…

Hi there!  Happy Thursday to you!  I am so glad that this week is almost over.  As usual, I haven’t been feeling too good with my stomach.  I am getting very frustrated with my current doctor as it seems as though he has given up all hope on me.  Not a good feeling to have from someone you should be trusting with your health.  I did some research and found a hospital in New Jersey that has an entire department dedicated to Inflammatory Bowel Disease. I think that is incredible.  I called the other day and made an appointment with one of the heads of the department there.  The only thing is that my appointment isn’t until the end of the month.  I cannot wait that long.  Last night, I was in severe pain with my stomach.  I am still feeling that way this morning.  I’m planning on calling there first thing this morning to see if they can get me in for an earlier appointment.  Hopefully they will have something next week.

I was really praying that once I started this new medication, I would be feeling better and that is not the case.  I don’t feel any relief at all.  That is frustrating to me because this is the medication that I put off taking all through our wedding and honeymoon.  I guess I could have taken it back then after all.  It’s not doing anything though so what good is it?  It’s very frustrating as I’m sure you all can tell from me complaining for months on end.  I apologize for that.  This is such a frustrating disease and I just don’t want to be in pain anymore.  I want to be able to enjoy my favorite foods and life in general without being in constant pain with my stomach.  I’m hoping for an earlier appointment and I am keeping my fingers crossed!

Moving on to something else.  I was inspired after attending the Ninja Cooking System event the other night and I wanted to use my crockpot to make something for dinner.  Yesterday morning, I decided I was going to make BBQ Pulled Chicken in the crockpot only later did I find out that I forgot the bbq sauce!  No big deal.  I mixed a can of french onion soup, ketchup and apple cider vinegar in a bowl and poured that over some boneless skinless chicken breasts.  I cooked it on low for 10 hours while I was at work.  Once I got home, I took the chicken breasts out of the crockpot and shredded them with two forks.  This is where I would have mixed in bbq sauce but since we didn’t have any, we both used some extra ketchup on the chicken.  To be honest, it didn’t even need the bbq sauce because the soup, ketchup and apple cider vinegar gave the chicken enough flavor.  I am not a huge fan of bbq sauce anyway.  I don’t really enjoy the flavor of bbq sauce and I am very picky when eating it.  So I actually preferred it without it.  We have a TON of chicken leftover which I am planning on freezing some and that will make for quick and easy dinners or lunches in the future.

Pulled Chicken Sandwich

Do you like bbq sauce?  What are your favorite condiments?  Like I mentioned, I am not a huge fan of bbq sauce and I am VERY picky with the flavors.  I absolutely LOVE mayo!  I’ve always been a fan of it.  I would always get a side of mayo and dip my french fries in them!  Yum!  I love mayo on burgers too.  It’s so good.  I like ketchup.  Lately, I love ketchup with fries.  I’ve always liked it with fries but ever since my stomach issues started up, I liked ketchup even more because I am okay from it.  I do like experimenting with different types of mustard’s too.

If I’m eating Mexican food, which is my absolute favorite food in the world, I love sour cream and guacamole as my condiments of choice.  Oh, and Chinese food, duck sauce is a must!  I love duck sauce. I don’t even understand what it is or why it’s called duck sauce but I really enjoy it.  It tastes good with spring rolls or egg rolls.

So there you have it.  I’m hoping to recap our wedding ceremony tomorrow!  So stay tuned for that!

  1. Oh boy … I am so sorry the new medication isn’t doing anything for you. Hopefully this hospital/practice in NJ will be able to squeeze you in for an emergency appointment and someone there will FINALLY be able to help. I know from my dad’s experiences that it really is a matter of finding the exact right medicine. It took something like five doctors (and a couple hospital stays and misdiagnoses) for them to get him on the right track … and even now, his doctor will periodically switch either the medicine itself or the dosage. I hope someone can find that right combination for you soon. It makes me so sad that you’re still dealing with all this pain.

    • It’s okay. I hope so too! I called them a bunch of times yesterday and nothing was done about moving my appointment up yet. I’m hoping they will do something today though. I hope so too. That is awful. I’m glad that your dad is able to manage symptoms and pain. It’s such a frustrating disease. I hate that about it. No two things work the same for anyone. It’s really frustrating.   2. I definitely love BBQ sauce! Condiments and I are good friends, haha! And hey, I’m sorry that the new meds aren’t helping like you hoped. :( I hate that you are still in pain! On the bright side, I am looking forward to hearing more about the wedding!! :)
