Hi there! Happy Thursday to you! It’s hard to believe that this week is almost over. I don’t know about you but this week has seriously flown by so quickly! I don’t know where it went. I feel like it was just Monday. I think like I keep mentioning, that it’s because I am just so busy at work and then I’ve been busy every night at home when I get home from work. So I’ve really been preoccupied. It’s all worth it though. Last night, was one of the worst commutes home! It took me well over an hour to get home. I couldn’t figure out what the problem was. I wasn’t listening to traffic because I was talking to my dad on the phone while driving home. I didn’t see any accidents or anything. It was such a slow crawl. It was terrible. My gas tank kept getting lower and lower and I had to get to the print shop before they closed at 5pm. It was a nightmare!
As I pulled up to the ramp, I saw an entire tractor-trailer completely overturned on the ramp! I’ve never seen something like that before. Sure, I’ve heard it on the news and the radio but I’ve never seen it in person. I seriously don’t know why some of these trucks drive so fast especially on exit ramps! It’s dangerous. I hope the person driving was alright and that they didn’t do anything to any other drivers. It was very scary to see. Once I made it out of there, I rushed to the print shop in just the nick of time and then I raced to the gas station and beat my gas light. Whew! It was a very long and tiring commute home to say the least.
When Mike got home, we decided to venture back out this time but only to the local supermarket to pick up some pizza dough. We were in luck! It was on sale for $1.50! Talk about the best time to randomly want to make a pizza. I’ve mentioned that tomatoes have been really irritating my stomach so I decided to use some pesto sauce that we had from the other night with mozzarella cheese on my side of the pizza.

Mike’s side has vodka sauce, pepperoni and mozzarella cheese and my side has pesto sauce and mozzarella cheese.
I’ve never had a pizza with pesto sauce on it before. I have to say it was a little odd eating a pizza without tomato sauce on it. I’m not sure that I really missed it all that much though. Regardless, my stomach hurts all the time but it didn’t get intensified by dinner. So that is a good thing. I really do love pizza. It’s one of my favorite things and I was craving it so bad. I’m glad that I was able to enjoy it without causing more harm. There is a pizza place at the Sandals resort where we are staying for our honeymoon. I’ve heard that the pizza is incredible. I’m hoping that they will be able to make me a white pizza or something without sauce on it. I’m sure they will be able to.
I really hope and pray that I will be able to go back to eating some of my favorite foods again. I have an appointment to see my gastrointestinal doctor the Friday of the week that we come back from our honeymoon. I will be done being stubborn and do whatever the doctor tells me and whatever medication that I need to be on to get better. I want my Crohn’s in remission already! I cannot wait for the moment that it is. I think it will be such a rewarding and fulfilling moment that is for sure.
What kind of toppings and sauces do you like on your pizza? Any ideas of what I could do that doesn’t include tomatoes?

I do love a good white or pesto pizza… for white you can use ricotta cheese and shredded italian blend with a drizzle of olive oil. Or you could make buffalo chicken (blue cheese dressing, cheddar, chicken) and go light on the hot sauce.
Thank you for the pizza ideas! They both sound delicious. I’m definitely going to have to try them!
