My First Home Panini Experience!…

Hi there!  Happy Monday to you!  I hope you had a great weekend!  What did you do this weekend?  I feel like it flew by entirely too fast!  My weekends leading up until our wedding are pretty booked with stuff.  The rest of the month my weekends have things to do.  Then next month I will be focusing on the last-minute things that I need to get done for our wedding.  It’s going to be a crazy couple of weeks.  I can hardly believe that tomorrow will only be a month away.  It’s insane how quickly our wedding is around the corner.

So let’s recap my weekend, shall we?  On Friday after work, it took me forever to get home.  They closed a major highway that I use to get to my house.  I’m not quite sure why or what the deal was but it took me so long!  Once I finally got home, I stopped at my house quickly to get a few things and then picked up Melissa.  We went to Wegman’s for dinner.  I opted for sushi.  I was going to eat Chinese food but my stomach was killing me and Melissa talked me out of it.  I was glad that she did because it wouldn’t have been the right and logical decision to make.  I went with a California roll and Edamame.  You can’t go wrong with that.

After dinner, we ran some errands.  We got some things for the bathroom baskets at our wedding.  We stopped at some stores and browsed.  It was fun.  I picked up a few things at Bed, Bath and Beyond because I had something to return.  So I’m glad about that!  I can’t wait to try some of the items out.  After shopping, we went back to Melissa’s house for a bit and then I ventured home and went to sleep.

On Saturday, Mike and I took my car in for an oil change, and while we dropped it off we went to our travel agent.  We were informed that our travel agent has left the company and didn’t tell us!  Just what we need a month before our honeymoon.  Luckily, we sat down with an extremely nice girl who is going to take care of everything for us.  I’m so thankful that we were able to talk to someone else who was really nice.  She gave us all of our information.  We are going to try our hand at seeing if we will get a free upgrade to First Class on the plane.  There are only 3 seats taken.  The rest are open.  We are going to the airport shortly after getting married.  So my hair, and makeup will still be done. I’ll be wearing a Just Married shirt.  I’m hoping and praying we will get a nice agent and they will want to upgrade us.  It will only be like 4 or 5 hours after getting married that we will be at the airport.  So hopefully it will all work out.  I’ve never sat in First Class before!  Have you ever sat in First Class on an airplane?

We finally picked up my car, and went home to change.  We had Mike’s friend/groomsman, Joe’s engagement party to go to.  He is getting married next summer.  It was nice to see our other friend/bridesmaid/best man, Russ and Kristen.  We don’t get to see them that often because they live over 2 hours away.  It was nice to sit and catch up with them.  Kristen is unable to come to my Bachelorette party this weekend.  So she wanted to take us out to dinner to celebrate.  We decided to go to the Bonefish Grill.

I ordered crab cakes with green beans and Jasmine rice.  The rice was incredible!  It tasted like sticky sushi rice which I love.

It was really nice of them to take us out to dinner.  We really appreciated it.  Thank you, Kristen and Russ!!  It was nice to hear stories about their wedding which was 4 years ago.  Crazy to think that we were at their wedding that long ago! Time really does fly!  I like hearing about other people’s wedding experiences.  It’s interesting to compare it to your own.  Each one is unique but there are a lot of similarities for sure.

On Sunday, I woke up pretty early and caught up on my dvr shows.  Then I spent the rest of the day working on wedding things.  I took a break for us to go food shopping and then I went right back to it.  I sat there for well over 4 hours doing 2 projects.  Not as long as I intended to but at least it’s done now.  One less thing to stress over.

We decided to use our Panini press to make dinner that Melissa and my mom got us!

We decided to keep things simple and make a tuna melt.  We each used one can of tuna, vegan/dairy-free mayo, and dairy-free cheese.

We love the Griddler!  It’s an amazing kitchen appliance to have.  I love the way that panini’s taste and now I can enjoy it from the comfort of my own home.  You can also flip over the grill plates and it becomes a griddle.  I cannot wait to make pancakes.  We have never had a griddle.  So it will be nice to actually make good tasting pancakes on a griddle instead of a skillet on the stove.  The possibilities are endless with this machine.   I cannot wait to use it more.  Yay!

We spent the night relaxing and watching Big Brother once our last wedding tasks for the evening were completed.  We are making a lot of progress.  The more I can get done this month, the less stressed I will be next month.  That is the goal!

Alright, well have a great Monday!  Keep cool.  It’s gross out there!

  4. What a fun weekend! I spent mine hiking with the boyfriend, making tacos and hitting our condo pool in the rain.
    The paninis look yummy!
