Lightning Crashes!…

Hi there!  Happy Friday to you!  I drove through some of the worst weather to get to work this morning!  It was awful.  I drove through pouring rain and a massive lightning storm.  I’ve never seen lightning like that before in my life!  It was crazy looking!  It illuminated the entire sky!  I wish I could have gotten pictures or video of it but sadly I was driving right in the center of the storm.  People decided to drive extra crazy this morning due to the weather I guess.  Some car decided to almost side swiped me and cut me off to get 2 feet ahead of me.  It was crazy!  Is that necessary?  Everyone is in such a hurry!  If you slowed down for 2 seconds, you will still get to where you need to go but safely.  I hate that.  The one highway that I drive on everyday, the people are nuts who drive on there.  You need eyes in the back of head, the sides of you and everywhere in-between.  They are reckless!  GR!

Enough about that!  What are you doing this weekend?  Anything fun planned?  I’m planning on getting more wedding items done.  Our graphic designer sent me the final copies of a few of the signs that I am putting out at our wedding.  So I’m hoping to get frames to put them in and go to Kinko’s to have them printed.  The more I can do, the less overwhelmed I will be weeks from now.  Our envelopes should be arriving today from the calligrapher after the mess that she put me through.  I should have had our invitations out by now.  Unfortunately, that has happened all due to the calligrapher!  I’m praying that they are on my door step when I get home and that they look perfect.  Then I have to rush to get them all stamped and to the post office before 6pm tonight so that they can be delivered on Saturday and Monday.  No pressure!  Geez.  I cannot wait for everyone to see our invitations.  I am very proud of them.  I worked extremely hard with our graphic designer on them.  I hope everyone likes them.

So after work yesterday, I ran some errands and stopped at the supermarket.  I wanted a rotisserie chicken really bad.  I haven’t had it in such a long time.  I was in luck.  There were 3 left!  I grabbed a bbq flavored one because it smelled so incredibly good.  I couldn’t resist it.  I also made white rice to go along with it.  Last night should be documented that I made the most perfect, fluffy rice that I have ever had!  I made it the way Melissa made for me a few months ago.  It turned out great!

The chicken was really good too.  For some reason, I find the rotisserie chickens just taste so much better.  I wish I had a rotisserie in my house.  I’d be making these chickens all the time!  Do you like rotisserie chicken?

The rest of the night I took a break from wedding stuff.  I took a break for the last two nights because I feel like I’ve been overloaded with doing stuff.  I’m planning on picking stuff back up this weekend. At least I got a short break.  I just want to get everything done as quick as I can so I can relax somewhat leading up to our wedding.  I’d rather get the stress out-of-the-way earlier on rather than later.

  1. I saw the storm while I was at the gym but it didn’t look as crazy as the news was saying it would…then again, I was in a big building and was working out for the whole time.

    I LOVE rotisserie chickens. So easy to cook with when you need shredded chicken and you’re right, they taste so much better.

    • You were lucky you were in the gym! It was terrible driving in it. I’d be happy if I never had to drive in something like that ever again!

    I LOVE to make chicken pot pie with rotisserie chicken…everyone who’s tried mine is flabbergasted as to how i get it to taste so good – thats why! lol (and I understand your being proud of the rice, I can never really get mine right lol)

    Glad to hear you didn’t get run over by all the idiots on the road – you would think BIG STORM/CANTSEE would mean people would drive more careful…but nooooo (they do the same thing here in ATL and it drives me nuts – there are always like 4329873897234873 wrecks everyday WITHOUT there being any bad weather lol)
