Hi there! Happy Thursday to you! This week is going slow! At least it’s Thursday though so I can’t complain about that! Yesterday I was super excited to get home from work because I knew there would be a package waiting for me outside our door. Sure enough when I pulled up, the package was there by our door! Our wedding invitations arrived!!! I was so nervous and excited to see how they turned out. I opened up the massive box and assembled one invitation so I could see what they look like, and I am SO happy!!!! I am so impressed with how they turned out! I absolutely love them. They are even better than what I imagined they could be. I saved so much money by doing them the way that I did. I never in a million years thought I would be able to get the type of invitation I wanted because of the cost but I managed to find a way to do it cheaper! I am so happy!
I cannot wait to share the pictures of what they look like with all of you. I just have to wait until I send them out and our guests have received them before I post about it. I still haven’t heard back from the calligrapher which is making me a nervous wreck because I need to get these out as soon as possible. So I’m planning on taking a mini break at work today and giving her a call. I really need to mail out the envelopes to her by this weekend so she can get started on them. I pray I can speak to her today.
I think I’ve mentioned before in the past about our microwave in our house. Well the microwave that we have been using is the one that I used in my dorm rooms all through college. That thing lasted me 6 years! I can’t believe I just said I’ve been out of college for 6 years. That is crazy. Anyway, the microwave would start microwaving if nothing was in it! It would press random numbers by itself. It was very creepy! I think there was a short somewhere in the microwave. For a while, it stopped doing that and then all of a sudden we couldn’t press any numbers and it would keep typing in 6666 or 9999. It was awful! We finally decided to return a few items that we received from the shower and get a microwave instead.

This thing is massive! Our counter is pretty small so it sticks out quite a bit. I’m not that worried about it though. Like Mike said to me last night, we are not going to be living where we are living forever. So we might as well have the microwave that we want and it will fit in a house once we buy one. He is right. We got it at Bed, Bath and Beyond and for a pretty good deal. I love those 20% off coupons! It matches our Cusinart toaster oven perfectly. I’m happy with our purchase. Do you own a microwave? Would you be able to live without one? I wouldn’t be able to. I’ve grown accustomed to using a microwave for various items. I think it is a necessity at least in my home.
Once we got home we decided to make pizza on the pizza stone again. I used Daiya cheese for my section of the pizza because it is dairy-free.
I was not impressed by this pizza stone. I don’t know if we did something wrong again but I didn’t taste anything special about the pizza. I actually like how we normally make pizza better or if we grill pizza. I was not impressed. I think this pizza stone is a waste for us. I don’t know what we are doing wrong. Maybe I’m just not into the pizza stone trend? I don’t know. Either way, neither of us liked it all that much. Oh well. You live and you learn. At least we tried it though, right?
The rest of the night we spent trying to catch up on some dvr shows. I’m still so far behind on so many shows. It’s crazy. I’m hoping to use this weekend to catch up on the shows and do a ton of wedding diy items. I’m keeping my fingers crossed that I can get everything accomplished that I need to.

I can’t imagine life without a microwave. It makes everything so much easier. I’m pretty sure I’d eat cold food if I had to heat up leftovers in a pot or something. haha

I just came across your blog on FoodBuzz. First, apologies for the late post on pizza stones…
The trick is to pre-heat in a blazingly hot oven, 500 or 550F. We stretch the dough on a piece of parchment paper laid on a pizza peel. (I’m not smooth enought to get it into the oven without the paper.) The edges will scorch, but the paper under the pizza will be fine. Depending on how much stuff you put on top, it’ll be done in 10-12 minutes.
Another trick is to use very wet dough 80% hydration or more. It’s tricky to work with at first, and you need to plan ahead, but it makes a real difference.
