Chicken Piccata & Deep Dish Double Chocolate Chip Cookie!…

Hi there!  Happy Tuesday!  I can’t believe I’m saying Tuesday!  I apologize for my lack of posting over the weekend and yesterday.  I did have the day off yesterday and didn’t really have any time to update on here.  So I apologize for that.  I’m back though and I’m ready to go!  I hope all of you had a wonderful weekend.  What did you do this weekend?

I will catch you up on my weekend quickly and then I have two recipes to share with you that I think you are going to love.  They are two recipe successes and I am very proud of them.  So I cannot wait to share with you!  Let’s go back to Friday though.  On Friday after work, I picked up Melissa and we decided to go to PF Changs for dinner because Melissa had a coupon.  That was a big mistake because all of our food came out awful.  It was very disappointing!

I sent the shrimp back numerous times because it looked very undercooked.  It still came out really lightly pink.  I don’t know.  The whole experience was awful. The service was good but the food ruined everything.  Through the magic of Twitter, I tweeted to them and they are willing to refund me for our meal.  I’m thankful for that.  It’s ridiculous wasting money on food that is terrible.

After dinner, we ran some errands and then decided to get a cocktail.  We sat at the bar for a little while talking and laughing away.  It’s always a fun time people watching.  You see the most interesting people when you are in a bar atmosphere.

On Saturday, Melissa and I went out in the afternoon to run some other errands.  We got some amazing deals at Kohl’s.  I had to exchange our coffee machine because the whole thing broke and started a massive flood on our kitchen counter!  That was not fun to clean up, let me tell you!  We have a new machine though and it is working perfectly so far.  Knock on wood!  I also tried on my wedding down with my new strapless bra and it looks great!  Once my dress is altered, I think it will look perfectly.  Trying on my wedding gown with my veil again made me so happy with my choice.  I cannot wait to wear it in almost 2 short months!

I went home and Mike and I hung out for a while before deciding to go eat at Bertucci’s.  We had a gift card to use.  I decided to order their grilled chicken marsala.  It was very good.

After dinner, we walked around a couple of stores and then decided to rent New Years Eve.  That movie sucked!!!!  Valentine’s Day was such a better movie.  I actually started passing out during the end of it because of how boring it was.  What a major disappointment.  We were both disappointed.  At least the rental was free!  Thanks to codes for Redbox.  Love using that machine!

On Sunday, I spent the majority of the day just relaxing and then Mike and I decided to finally go to the supermarket.  I had some new recipes that I wanted to try out for our dinner.  I actually ended up spending 3 hours in the kitchen cooking!  This was the first time since I got sick in December that I actually cooked a full meal.  I was proud of myself.

For our main course, I made Chicken Piccata served with ziti, roasted string beans and garlic bread.

Chicken Piccata


1 pound thinly sliced chicken breasts





Olive Oil

Cooking Spray

Sliced Mushrooms


1 can of low-sodium chicken broth

2 lemons


Thin sliced chicken – coated with flour, pinch of salt and lots of pepper.

Saute in non-stick pan with 1-2 tbsp. of olive oil and a smidge of butter.  Brown both sides and remove from pan.

Throw in sliced mushrooms and cook til just loosing firmness.  Add 1 cup of non-fat, low-sodium chicken broth to pan drippings with the juice of one lemon.  Take 2nd lemon and slice – reserve for later.

Cook spinach until just loosing firmness but don’t let it get soft.

Place chicken breasts in a baking dish sprayed with cooking spray.

Add sauce and veggies and bake for 30 minutes or until chicken is cooked through at 350 degrees.  Add more chicken broth if the gravy soaks up.

This chicken was phenomenal!  Mike and I both loved it so much!  It’s based off of my friend/bridesmaid, Courtney’s mom’s recipe.  She actually made this for me for dinner a couple of weeks ago and I loved it so much.  It’s really a great recipe and is very impressive to use when entertaining!  I loved it so much!  Definitely will be making it again in the future.

For dessert, I used our cast-iron skillet to make a deep dish double chocolate chip cookie!

Deep Dish Double Chocolate Chip Cookie (from Recipe Girl)


8 tablespoons (1 stick) unsalted butter, softened
1/2 cup packed light brown sugar
1/4 cup granulated white sugar
1 large egg
1 tablespoon vanilla extract or vanilla bean paste
1 cup Gold Medal® All Purpose Flour
1/2 cup oats
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon Kosher salt
1 to 1 1/2 cups chocolate chips
vanilla ice cream, optional


1. Preheat the oven to 350 degrees F. Spray a 9 or 10-inch cast iron skillet with nonstick spray.

2. In a large bowl, use an electric mixer to combine the butter with the sugars until creamy and light, 2 to 3 minutes. Mix in the egg and vanilla.

3. In a separate bowl, whisk together the flour, oats, baking powder, baking soda and salt. Add the dry ingredients to the wet ingredients and mix until combined. Stir in the chocolate chips- 1 cup for a regular amount and 1 1/2 cups if you’re a mega- chocolate chip lover.

4. Scrape the cookie dough into the prepared skillet and pat it into an even layer (damp hands or hands sprayed with cooking spray helps with this). Bake 25 minutes, or until cookie dough is set. Remove from the oven and let the cookies cool for at least 20 minutes. Cut and serve warm, or wait to cut later. Serve slices topped with vanilla ice cream, if desired.

This cookie was the best thing ever!  We absolutely LOVE it!  I will totally be making this again!  If you don’t have a cast iron skillet, you are missing out!  This is amazing!

So yesterday I had a test done to check the inflammation in my small intestine.  It was one of the worst tests I ever had in my life.  I know I’ve said that about things in the past but I mean it with this one.  It was terrible!  I should hopefully get the results back today.  I’m hoping we can come up with a plan now to get rid of this pain once and for all!  I spent the day with Melissa yesterday after my test.  We had a great time hanging out together. I got a ton of DIY items that I need for our wedding.  Now I just need to start on the projects.
