Hi there! Happy Monday! I hope you had a great weekend. What did you do? I’m so exhausted today. I really need to try to go to sleep earlier. I don’t like staying up till 10 or past 10pm. It makes it so much harder for me to get up in the morning since I get up at 5am. I keep staying up to watch tv shows and I need to stop. It doesn’t make getting up in the morning fun at all. Hopefully I will be able to go to sleep a little bit earlier tonight. Fingers crossed.
So I want to recap the weekend for you. On Friday, after work, I went over to Melissa’s house and picked her up and brought her back to mine. I had to get some things together and then her and I ran an errand and picked up dinner from Bertucci’s. We had a coupon and no one felt like cooking so it was perfect. I ordered a chicken dish and didn’t realize the chicken was slightly breaded. So that ended up making my stomach feel really crummy.
After dinner, we went to the mall so that I could try to find a strapless bra to wear underneath my wedding gown. I ended up finding the perfect one like I was looking for. Now I just need to try it on underneath my wedding gown to make sure it is the right fit and everything. My alterations are coming up around the corner and I want to make sure I have everything in order for that first appointment. I will need to try my dress on with the bra sometime this week. I’m praying that it looks perfect. We spent a little more time in the mall before leaving in a huge downpour of rain. This was on-going theme for Friday night. It would pour and then stop and pour and stop. It was irritating.
We decided that we both needed a cocktail so we went to Chickie’s & Pete’s and sat at the bar. After being insulted by a bouncer at how we both don’t look our age, we decided on a cocktail. I went with 3 Olives Loopy vodka with club soda. It was delicious! I think my new drink is vodka with club soda. It’s gentle on my belly and tastes yummy! So that is what I will have when I want a cocktail besides wine. We had a nice time talking and people watching. It’s always fun seeing what characters walk into a bar.
On Saturday morning, Mike and I woke up pretty early to head over to the jewelry store where he bought my engagement ring. We browsed the cases and I finally found a wedding band! The jeweler is going to design a wedding band that matches the band of my engagement ring perfectly. He has samples in his cases and then he designs anything that you want. I’m happy about that and cannot wait to see what it will look like in a few weeks. He didn’t have samples of the band that Mike wants so he is going to order samples so Mike can try them on and then he will order Mike’s. We have plenty of time for the rings. So I’m glad that it’s finally taken care of! That was stressing me out big time.
After the jeweler, we stopped at Payless so I could pick up a pair of cute wedge sandals. Melissa bought a pair on Friday night and they didn’t have my size. So I went to a different store and got a cute pair for $7! Talk about a bargain! We went to a few more stores and stopped at Courtney’s house for a bit and then went home.
We decided that we wanted to see a movie so we went to Pizzeria Uno for dinner because if you eat there you can buy movie tickets for only $7! Not a bad deal if you ask me. I ordered a black bean burger that I forgot to take a picture of. It was the BEST burger I ever had in my life! We then went to see Snow White and The Huntsman. I thought it was okay. It was a little long and drawn out. I wasn’t too impressed to be quite honest.
On Sunday, Mike and I ran some errands and went food shopping. I was ready to try out a new recipe! The kind people at Annie Chun sent me a few items to try out!
I decided to try a recipe that I had seen on Annie Chun’s website for Island Chicken!
Island Chicken (from Annie Chun)
- 3 TBSP Annie Chun’s Korean Barbeque Sauce
- 1 package of Annie Chun’s Sprouted Brown Rice
- 1 cup chicken breast- boneless, skinless (diced into 1 inch pieces)
- 1/4 cup red bell pepper- large dice
- 1/4 cup pineapple chunks
- 14 cup of juice from pineapple chunks
- Salt and pepper chicken breast
- Heat large sauté pan with vegetable oil and sear chicken pieces.
- Lower heat to medium- low, add bell peppers, pineapple juice and Korean BBQ
- Let chicken simmer until fully cooked (6-7 minutes), basting chicken occasionally
- Finish with pineapple chunks and simmer another minute or so.
- Adjust seasoning with salt and pepper.
- Serve over white or brown rice.
This Island Chicken was incredible! Mike went back for numerous refills of his dinner. He really enjoyed it. It had so much flavor! I loved the Korean BBQ sauce! It had such an interesting flavor and really enhanced the meal. Mike is not a fan of rice so I was nervous if he was going to like the Sticky Rice. We both loved it! It was like we were eating at a Japanese restaurant. I really enjoyed these two Annie Chun products. I am looking forward to trying the rest and experimenting with them in the future.
