End Of April Favorites…

Hi there!  Happy Friday to you!  I hope you had a great weekend and have fun plans for the weekend ahead!  What are you doing this weekend?  I don’t really have much planned.  I need to finish getting Melissa’s birthday presents together.  I’m excited!  Her birthday is next Thursday.  So I’m just making sure that everything that I need is going according to plan.  I hope she likes what I am getting for her.  I love celebrating other people’s birthdays.  It’s fun!  That pretty much sums up my weekend.  I’m hoping to catch up on some sleep tonight.  I want to look at a few stores tonight once Mike and I are done dinner.  That is pretty much it.

After work I decided that I was going to poach some chicken breasts so that I would have shredded chicken to put in a quesadilla.  I wanted Mexican food and this was the closest that I am going to get to it for a while.  At least until after I’m out of this flair up.  Well that was a bad idea!  The chicken turned out terrible!  It was covered in like white goop.  It smelled awful and it was very rubbery.  I couldn’t even cut it!  I really wished that I would have put them in the crockpot before I went to work.  I really like cooking chicken in the crockpot because it’s so tender and moist.  Next time that is what I am doing.  This was a complete disaster.  Not only did I waste time and effort, I wasted money which I am upset about.  At least I tried it and now I know what not to do next time.

So I ended up cooking some vegetables that I have been able to tolerate, spinach, mushrooms, string beans and zucchini.  I tossed the spinach, mushrooms, and Daiya cheese into a quesadilla and then toasted it in the toaster oven.  Was it my favorite dinner?  No, but it did its job.

Spinach, Mushroom and Daiya cheese Quesadilla with roasted green beans and zucchini on the side.

Not exactly the Mexican inspired dinner I was going for but I have to take things in baby steps.  Eventually I will get back there!  I swear I will.

I realized that I used to a post of some of my favorite things for the month and I haven’t done that lately.  Since Monday is the last day of the month, I figured I would use today and talk about some of my favorite things of April.  It doesn’t have to be food related.  It can be anything.  Here I go.

Annie’s Organic Rising Crust Pizza

I tried this pizza couple of weeks ago.  You can only purchase it in Whole Foods.  That is the only negative thing about it because there isn’t a Whole Foods that close to my house.  I loved this pizza though!  Mike and I were huge fans of it.  The crust was nice and doughy.  It was a great pizza especially for a frozen one.  I am dreaming of the next time I get a chance to buy it again.

Alexia Oven Baked French Fries

The Sweet Potato Puffs & the Waffle Fries are my favorite from Alexia.  Whenever they are on sale and I have a coupon, I am sure to stock up.  They are quick and easy to prepare.  You just bake them in the oven and they aren’t fried or greasy.  The best part is that they are all natural.  Definitely one of my favorite potato products for sure.

Herbal Essences None of Your Frizzness Shampoo

It’s difficult for me to find a good shampoo that makes my hair feel soft and doesn’t leave it frizzy.  My hair is extremely curly/wavy and thick.  I straighten it every single day because I don’t like how it looks curly and if I let it go curly it ends up being a huge frizz ball.  I really like this shampoo a lot.  I use two different shampoos and this is the one that I finish off my hair with.  It leaves it smelling amazing and its soft and shiny.  I highly recommend it.

Aussie Moist Shampoo

I do wash my hair twice with two separate shampoos.  This is what works for my hair, it might not necessarily work for yours.  I start with the Aussie Moist Shampoo.  This shampoo smells great and it makes my hair feel hydrated.  I don’t finish washing my hair with this because it does make it feel a little greasy.  So I put the moisture in my hair and then I use conditioner.  I just use a drop on my ends and then finish my hair with the Herbal Essences.  It’s a process but it works and makes my hair feeling soft, shiny and more manageable.

Wonder Whole Grain White Bread

I have been staying away from wheat products for a while until I’m clear of this flair-up.  I have become obsessed with this bread.  It’s so light and fluffy!  It’s perfect for sandwiches or to use for toast.  I cannot get enough of this bread.  After eating this bread,  I don’t know if I could ever go back to eating whole wheat bread ever again.  This one is too good to pass up!

Luna Bars

The Peanut Honey Pretzel and Chocolate Dipped Coconut are my absolute favorite flavors from Luna!  I usually rotate which flavor I will buy weekly. Speaking of which, I only have one Peanut Honey Pretzel left.  These bars are so good and not to mention they are good for you!  They give you nutrition and minerals that your body needs.  I really love these.  They are great for a snack or on the go.  I will be sure to pack a ton of these on my honeymoon.  I love these bars!

Well that concludes some of my end of April favorites.  Do you like any of the favorites that I mentioned?  What are some of your favorites of April?

Have a great Friday!

  1. I love Aussie products. I use their Three Minute Miracle conditioner and and it leaves my hair softer and smoother than when I use more expensive hair masks.
I always stock up on the Alexia Sweet Potato products. Both Munchkin and Tommy are huge fans of sweet potato fries, so they come in handy for a quick meal or snack.
    Have a great weekend! :)
