Hi there! Happy Tuesday! Today is officially 4 months until our wedding! How did that happen?! It seems like time is just flying by. I feel like I just announced that we got engaged and now we are only 4 months away from walking down the aisle? It’s crazy to me. I still have a decent amount of work to get done. I’m sure these 4 months are going to fly by so incredibly quick. It will be here before we know it for sure.
I’m really loving this nice weather. The hot temperatures aren’t going to last through the week though here. It’s supposed to cool down a little bit towards the middle of the week. As much as I hate rain, we could really use some. Allergies are just terrible because of all of the pollen. It hasn’t rained in such a long time and we could use some to wipe away those allergens and just water the plants and grass. I think we are supposed to get rain at some point this week.
I was so exhausted by the time I got home from work yesterday. It was just a really long and stressful day. It seems like most days are very stressful lately but such is life. It wouldn’t be life if it wasn’t stressful. I spent the rest of the night relaxing until I finally got around to making dinner. I decided t make the rest of the turkey burgers from the package that we had purchased. I seasoned them with salt, pepper, and some ketchup and baked them in the oven for about 25-30 minutes. I didn’t feel like grilling or cleaning a grill pan. So I just decided to take the lazy route and bake the turkey burgers. I think they taste really good baked. The only difference is that it is missing grill marks. I’ll have plenty of opportunities to grill this summer so I didn’t miss it too much.
I also roasted some string beans and mushrooms and made a baked potato with Earth Balance “butter.” Vegetables are still irritating my stomach but I feel like I might be able to tolerate string beans and mushrooms for the time being. I’m making some progress! Some is better than none.
I’m hoping and praying by the time the local farmers market comes around, I will be able to enjoy all of my favorite fruits and vegetables. I have really missed eating a salad every night with dinner and eating my favorite vegetables especially brussels sprouts. You don’t realize how much you miss certain foods until you realize that they bother your stomach and you need to take a break from them. I’m really hoping my stomach shapes up soon. All of this has just been too much and gone on for far too long. I especially want to be able to enjoy all of the food that I want on our honeymoon. I just need to make sure I am prepared and eat things within reason.
Do you like burgers? What are you favorite kind of burgers? I do like regular hamburgers but I like turkey burgers too. If I had the choice I would almost always choose ground beef burger over turkey. It was a much more flavorful taste to it. I also like veggie burgers but I am very particular about them. My favorite veggie burger is the Veggie Masala burger from Trader Joe’s. I love that you can see pieces of actual vegetables in the burger! It’s really good and has great seasoning. I miss those burgers. I will get to eat them again soon, I’m sure.
The rest of the night Mike and I spent catching up on some DVRed shows and watching Gossip Girl. I was pretty shocked about the news regarding Chuck and his mom. I had somewhat of an idea but I didn’t really suspect who it actually is. Makes things very interesting considering her relationship with Nate. We shall see what happens! What I’m really looking forward to is Revenge coming back on Wednesday! It hasn’t been on in such a long time. I hate how that show takes such long breaks! It’s awful. I’m also looking forward to the return of Rookie Blue this summer. I hope it comes back this summer and of course Big Brother! We are definitely going to need to DVR the shows while we are on our honeymoon and watch them as soon as we come back! Obsessed much?
