I’ll Take Mine, Over Easy…

Hi there!  Happy Friday to you!  Can you believe it’s already the end of March?!  Seriously, where did the month go?!  It completely flew by!  I am not a huge fan of the month of April for some reason.  I’m not sure why.  I just never really liked it.  I do like May though!  Melissa’s birthday is in May and we do our annual winery tour to celebrate!  I pray that I am able to enjoy wine by then.  I’m hoping that I will.  What are you up to this weekend?  Anything fun?  We are doing lots of wedding things this weekend.  We are going to our venue on both Saturday and Sunday to pick out things and narrow down details.  I’m also hoping that we will have time to stop at the hotel down the road to put together room blocks and to see if they have a shuttle available for free.  I’m hoping that they have a shuttle because I would feel much better if people were able to stay at the hotel and have free transportation to and from our wedding especially if they will be drinking.  I think it’s much safer.  I also want us to check out a couple of restaurants that we have in mind for our rehearsal dinner.  So there is lots to be done this weekend!  I’m hoping we can accomplish everything that I have planned for us.  I think we will.  I am slowly chipping away from my to-do list.  Etsy has become my new best friend!   I love that site!

So yesterday morning, I called my doctor to talk to him about my medications and how I am feeling.  For some reason he never called me back!  I’m assuming the girl in the office I spoke to never gave him my message because that is not like him.  We really need to devise a plan because the medicines that I am on are not long-term.  I’m trying to avoid every single possibility of being put on that extremely strong medication.  I do not want to deal with the side effects of the medicine on top of everything else.  So I’ll see what happens.  Hopefully I can get in touch with him today.

Once Melissa got home from work yesterday, I went over her house and we hung out for a while.  My mom made me eggs.  Now the only way that I know how to prepare eggs is an omelet, scrambled and sunny-side up.  I don’t know how to prepare them any other way.  My mom knows how to prepare them a million different ways.  So I decided to have them over easy because I thought they looked pretty cool and it was something different. I paired a baked potato with Earth Balance butter on it to go with it.  Kinda weird and random but it’s just like hashbrowns, right?  Except in potato form.

I have no clue how to make eggs look like that!  Do you like eggs?  How do you enjoy eating them?  I like hard-boiled eggs, scrambled, sunny-side up, over easy, omelets, and fried.  I love having a fried egg and cheese on a bagel.  It’s so delicious!  I really need to learn how to make it.  I haven’t had a fried egg in so long.

I remember growing up that I loved egg salad sandwiches. They were my absolute favorite.  I still love them to this day.  My grandmom on my dad’s side would always have hard-boiled eggs ready at her house when Melissa and I would visit.  She would make me egg salad all the time with the addition of egg shells by accident.  Hah.  I always wondered what the crunchy parts were.  I had to be sure to see if there were shells in it before eating it.  I learned my lesson.  The sandwich was good though.  I haven’t made egg salad or hard-boiled eggs in a long time.  I should probably do that.  It’s good to change things up!

After dinner, Melissa and I went to Walmart to browse and pick up a few things.  Their prices actually got high there.  Compared to some of Giant’s prices, Walmart can be kind of pricy.  I was surprised.  We ended up getting into an argument about coupons with the cashier.  She then proceeded to ring up my shampoo twice.  She was in another world, not paying attention.  Seriously, if you are going to be ringing up items and working as a cashier, you need to be alert and see what you are doing.  It was very frustrating!  I ended up getting 4 Duncan Hines cake/muffin mixes for free!  I cannot wait to try them out.  That was a good thing despite the craziness there.  It was so crowded and by the time we were done, we couldn’t wait to leave that store.

I went home once we got back and Mike and I looked at some menus for places to possibly host our rehearsal dinner.  I couldn’t manage to stay up much longer and eventually fell asleep as soon as my head hit the pillow.  I’m hoping to catch up on some sleep this weekend at some point.

  2. Seeing the potato reminded me how long its been since I’ve had a white potato. I gotta fix that. Great post!

    Also – hope you can get in touch with the doctor today and, as always,.that he can come up with a medicine plan that works. Spring is all about renewal and rejuvenation, so your body has to follow suit, right? ;)

  4. Over easy eggs are pretty east to make. Just crack an egg like you would for a sunny side up and when its almost ready, flip it. That’s my fav way to make eggs!

    Good luck with all your wedding things this weekend! Four months is going to fly by! So exciting!

  5. Wedding planning is crazy! So many things to think about, but everything will be worth it :)

    I used to hate EVERY egg. But now I can eat scrambled (as long as it has hot sauce or cheese). Hard boiled eggs still completely repulse me, haha.
