Dairy-Free Chicken Parmesan…

Hi there!  Happy Thursday!  I hope you are having a great week!  How about this weather that we have been having?!  Yesterday was absolutely gorgeous outside!  It was around 65 degrees and not a cloud in the sky!  Today is supposed to be even better.  The temperature is supposed to go up to 70 degrees.  It’s crazy!  It’s not even Spring yet.  I think the official first day of Spring is on March 20th.  I always look forward to the first day of Spring because it’s usually free Rita’s Water Ice.  For those of you not familiar with Rita’s, you are missing out!  Water ice is flavored ice.  It’s almost like a snow cone but better!  It comes in several different flavors.  You can even choose to have a gelati which is a layer of water ice, a layer of custard, a layer of water ice and then topped with custard.  It’s heavenly!  Do you like water ice?  What is your favorite flavor?

So yesterday after work, Mike and I had a plan for what we wanted to cook for dinner.  I was nervous about how my stomach was going to react but I’ve been craving this ever since I saw people making it on the Food Network over the weekend.  I couldn’t stop thinking about Chicken Parmesan.  I don’t know why.  I’ve always liked it but I haven’t had it in years.  Once I mentioned it, Mike couldn’t stop thinking about it either.  So we decided we were finally going to give it a try last night.  Let me tell you, it turned out phenomenal!  My stomach didn’t agree so much.  I felt extremely sick after eating dinner.  I learned my lesson for sure.  I can’t eat things like this until the inflammation has gone down and my stomach is healed.  I’m hoping all of that is accomplished once I meet with the new doctor.  Anyway, you seriously MUST try this recipe!  It’s delicious!

Dairy-Free Chicken Parmesan

Serves 2


2 chicken breasts

1 cup to a cup and a half of bread crumbs (Panko)

1 egg

1 tsp. of Italian Seasoning



One Jar of Tomato Sauce

Dairy-free Mozzarella Cheese (or regular Mozzarella Cheese, if you can handle dairy)


Preheat the oven to 425 degrees.

Take a sheet of wax paper and place one chicken breast on it. Take another piece of wax paper and place it over the top of the chicken.  Use a meat mallet or a rolling-pin to flatten out the chicken breast to your desired thickness.  Do this for both chicken breasts.

Set up a breading station.  Crack one egg in a bowl or container.  Place the breadcrumbs in another container and season with Italian Seasoning.

Take the chicken breast and place it in the egg mixture, then season both sides with salt and pepper.  Then place it in the breadcrumb mixture and then onto a baking sheet sprayed with cooking spray.  Do this for both chicken breasts.

Place in the oven and cook for 20 minutes.  Halfway through flip the chicken breasts so that they are able to brown on both sides.

Once the chicken is cooked, spoon your desired amount of sauce, and desired amount of cheese.  Place in the oven for 5 to 10 minutes until the sauce has heated up and the cheese is melted.

Serve over fettuccine or any type of pasta you like!

Delicious Chicken Parmesan!

This was such a great dinner!  Mike and I really enjoyed creating our recipe and cooking together.  The chicken was cooked perfectly and it had the right amount of crunch from the breadcrumbs baking in the oven.  I liked that this was not fried, it was baked Chicken Parmesan.  Plus, we saved SO much money cooking this meal at home.  If we would have ordered this in a restaurant it could have easily cost anywhere from $10 on up for one person.  This meal cost us probably less than $5.00 to prepare for both of us!  That is a huge savings!

I love Italian food.  It’s one of my favorite cuisines besides my ultimate favorite which you all know is Mexican.  I think after Mexican, it might be Japanese/Chinese and then Italian food.  But Italian is up there!  What is your favorite Italian food dish?

I obviously like Chicken Parmesan but I also like Chicken Marsala, Pasta with Vodka Sauce, Fettuccine Alfredo, Linguine with White Clam Sauce, Spaghetti with Meatballs and Chicken Picatta.  I am a big fan of pasta.  I especially like the uniquely shaped pastas. I think it makes eating it more fun.

  1. Rita’s is the best EVER. I love their fudge brownie cream ice, and also the cookies & cream. Have you ever had the butterscotch krimpet flavored water ice? It was one of my favorites, but I didn’t see it at any of them last year, so I’m wondering if they discontinued it. Gelatis are my favorite, but misto shakes are amazing too! Okay, now you’ve convinced me to take a Rita’s break at some point today… :)

    • I completely agree 100%! I have had the butterscotch krimpet flavor! That one was incredible! I didn’t see it much last summer either! I hope they bring it back. I love the peanut butter cream ice. It’s so good! I cannot wait to have a gelati. :) Haha! I hope you were able to get Rita’s!

    • Me too! Their water ice is amazing. I’ve grown up eating it and it’s the best. The custard is good too :)
