Good Morning! Happy Tuesday! I hope your week is off to a good start. Mine is going pretty well. I’m getting nervous though. This week my supervisor is going to be completing our annual reviews. I know some people have already had theirs. I’m just anxiously awaiting mine. It’s always nerve-wracking when you are being reviewed on your performance and whatnot. I know that I am hardworking and dedicated employee. So I’m hoping for a good review. We shall see!
I have good news! I called the doctor’s office yesterday in regards to them faxing me the medical excuse form for Jury Duty. I spoke with a really nice woman in the office and she told me the doctor actually had the form filled out on Friday. Someone from the office didn’t fax it to me! So she faxed it to me within 2 minutes and then I ran to put it in the mail. I’m so glad and feel so relieved that I have that excuse form in the mail. Now I just wait and see what happens to see if I am excused. If I am not then I need to call on April 2nd to see if I need to go in. For District Court, it’s two days or one trial. That could be a very long time and I just don’t know how I could manage sitting in a courtroom with all of these stomach issues. So I’m praying that I will be excused. I’m just glad that I was able to get the form submitted in time.
So after work yesterday, I waited until Mike got home to figure out what we were going to do for dinner. We had leftover chicken that I made in the crockpot on Sunday. So we were planning on eating that. I decided to cook some white rice for myself because I am getting sick of eating potatoes. I never seem to cook rice properly. So I decided to do something differently. I cooked the rice on the stove top and added 1 tsp of Earth Balance butter. It made a huge difference! The rice was nice and fluffy! I am always going to cook rice this way from here on out.
I kept thinking about Mexican food since I haven’t had it in so long. Mexican is by far my favorite food in the world! I love everything about it. I really wanted a quesadilla. So I decided to make one using flour tortillas, the chicken and Daiya cheese. I cooked the quesadilla in the toaster oven and it came out perfectly! I will never make a quesadilla on the skillet again.
This quesadilla came out perfectly crispy from the toaster oven. I loved it! I want to talk a little bit about this Daiya cheese. Daiya cheese allowed me the opportunity to try out their cheese products for free. Since I am lactose intolerant, I jumped at the chance to be able to try their products. I’ve seen them in Whole Foods all the time but they are expensive so I haven’t bought them.
Daiya products are free of dairy (casein, whey and lactose), soy, gluten, eggs, rice, peanuts and tree nuts (except coconut oil). Their products are also 100% vegan. Their cheese shreds come in three different varieties:
Daiya cheese melts perfectly on anything you sprinkle the shreds on it. It tastes like real cheese too! I love that because some dairy-free cheeses have odd tastes or a bad aftertaste. This cheese doesn’t. I’m looking forward to trying the other varieties of the shreds and using them in recipes once my stomach cooperates with me.

I am a huge cheese fan! I love several different kinds. I haven’t tried a lot of different cheeses. I would like to at some point. I think it would be fun to have a wine and cheese party to sample different cheeses.

Brie is absolutely incredible! I recommend it, if you haven’t tried it before. See, I told you I am not very cultured in cheeses. I know that I do not like feta, or blue cheese. I don’t like cheeses that crumble like that.
