Hi there! Happy Tuesday as well as Happy National Pancake Day! Did you know that if you venture to iHop today, they are offering a free short stack of buttermilk pancakes?! All they ask is that you make a donation to the Children’s Miracle Network while you are there. It’s a really great deal and you are supporting a good cause! I think Mike and I might venture there when he is done at the gym for dinner. I’m thinking that pancakes might be gentle on my stomach plus I could probably order a side of scrambled eggs for added protein and I know they are gentle. Are you going to iHop for free pancakes today?
Last night I was nervous and excited for dinner. A couple of weeks ago, the supermarket was having a huge sale on Gorton’s Fisherman products. They were 50% off, and if you spent $10, they would instantly take off $3.00. So paired with 3, $1.00 off coupons I had, it made for an amazing deal! We ended up getting 3 products to try. Mike and I are both not very adventurous fish eaters. Like I’ve mentioned before, I enjoy shrimp, crab, lobster, scallops, clams, tuna fish and more recently mussels. I know for a fact that I don’t like salmon. I’ve tried it numerous times and it is entirely too fishy for me to enjoy. Mike is even more picky than I am. He likes everything on the list that I mentioned except for scallops and clams.
So last night, we decided to try Tilapia!
Gorton's Fisherman Simply Bake Tilapia
I liked the fact that the fish was pre-seasoned which could be a good or bad thing depending on how my stomach decides to behave. I also like that it’s baked, and it steams in the bag. It’s very easy to cook. You pre-heat the oven to 350 degrees. Each box comes with two filets of tilapia. So I took a baking sheet and placed the two pouches containing the fish on them and let them bake for about 28 minutes. When you open the oven, you will see the bag has expanded so that the fish can cook and steam. It’s quite interesting how it does that in the bag.
When you open the bag, you will see there is a TON of sauce. A little too much in my opinion. I only used a minimal amount because I wasn’t sure how I was going to like it. I also made us a baked potato. I tried roasting asparagus and string beans to see how my stomach would react to everything.

So what did we think? Well Mike was the first one to try it and I was so nervous to see what he thought. I thought for sure, he was going to be making something else to eat because he wouldn’t like it. I was completely wrong! He loved it! I was shocked. I literally almost fell of my chair when he said he liked it. Since he liked it, I knew that it couldn’t taste too fishy or else he wouldn’t eat it. So then I took a bite. I was surprised myself! It was light, and flaky. It didn’t taste like fish at all. It almost reminded me of crab or something of that nature. I actually really enjoyed it! I didn’t like the sauce all that much but I did enjoy the actual fish.
That made me happy because now we both have another option to cook at home or order at restaurants. I’m glad that we decided to try something new! I think that tilapia would taste great in a taco. So I think that might be the next thing that I try with it. Do you like tilapia? Do you ever try any of the frozen fish products out there?
So regardless if enjoyed dinner or not, my stomach was not happy. I spent the rest of the night curled up in a ball on the sofa in pain and I’m still in pain this morning. I’m thinking that I still can’t incorporate vegetables into my diet yet or it might have been the sauce on the fish. I’m going to have to do some more experimenting. It’s quite frustrating and I’m sick of it already. I’ve been dealing with this for 2 months now.
I made an appointment for a second opinion. I’m going in 2 weeks. That was the earliest appointment they had. If things are continuing this way then I might need to see if I can get an earlier appointment. This doctor specializes completely in Crohn’s Disease as well as other IBD problems. So that is the doctor that I need to see. Although my doctor was good and did diagnose me, she specializes more in problems with the liver. I need to be treated by someone who specializes in what I am dealing with.
Enough about that. I’m very excited to hear who the new cast of Dancing with the Stars will be! They are announcing the cast on Good Morning America! I’m hoping that I can find it on the internet somehow because I don’t have access to a television being at work. I’ve heard some rumors of cast members and it sounds like they might actually have good people this year! I’m rooting for Paula Deen! I hope she is a cast member! Who do you want to see on Dancing with the Stars?
