Bakefest 2011!…

Good Morning!  Happy Monday!  I hope all of you had a great weekend and got all of your holiday shopping done. What did you do this weekend?  Anything fun?  I’m sorry that I didn’t post all weekend.  I was really busy trying to get things done and I just didn’t have time to sit at the computer.  I’m glad to be back now though!  I’m also thankful that this week is a week full of holidays and the fact that I have off from work on Friday and next Monday!  That is something to look forward to for sure.

So let’s go back to Friday.  On Friday, I got home from work and I was so tired and wasn’t feeling that great.  I haven’t been feeling 100% lately.  I think I might have an ear infection or sinus infection and I’ve been putting off going to the doctor.  I think I’m probably going to have to break down and go sometime this week.  It’s not good to walk around like this.  Anyway, I watched everything on my dvr and in the process fell asleep right as Mike came home from the gym.  Once he came home, we both decided that it would be easier to just grab something to eat because we wanted to stop at the mall.  I had jeans to exchange for a smaller size.

We both decided on Red Robin since we hadn’t been there in a while.

Amazing seasoning they keep on the tables

This seasoning that they keep on the tables is amazing!  It’s a blend of 20 different spices and it tastes so good on their amazing steak fries.  It’s a must when dining there.
I decided to order a cheeseburger.  It was really good.  I haven’t had one in a while and this sure hit the spot!

After dinner we went over to the mall.  We were at the mall pretty late. It was around 10pm and it was packed in there!  I had two pairs of jeans to exchange at Express for smaller sizes but unfortunately, they only had the one pair.  So I exchanged the one pair in my size and then decided that I would try another express on Saturday.  At least I was able to get the one pair exchanged.
After the mall, we head home and watched tv for a little before falling asleep.  On Saturday, I did some things around the house that needed to get done and then Mike and I went out to run some errands.  I was able to get the other pair of jeans that I needed!  Yay!  I was very happy about that!  Speaking of which, on Saturday our wedding is now 8 months away!  I’m so excited!!  When errands were done we both came home and Mike got ready to go to the movies with Ryan and I went over to Melissa and my mom’s house.
We decided to pick up some sushi from Arirang because I had an amazing coupon!  It was for $10 off so I barely paid anything for what we ordered.  I love deals like that!  It’s amazing.

After dinner, Melissa and I went out to get supplies for our Bakefest 2011 on Sunday!  We had some ideas of what we wanted to bake and just needed to get some ingredients.  It was fun planning out our course of action.  We stood in line for a really long time to check out at the store.  That was the only bad part but that is to be expected especially so close to the holidays.
When we were done shopping, we stopped at Fridays for a drink and to talk.  Melissa and I had such a great conversation.  It’s those moments that stick with you forever.  Her and I have been through so much and still go through so much in regards to our family and our parents divorce.  It’s hard.  It’s nice to know though that we can lean on each other and know what the other one is thinking or feeling because we are both feeling the same exact thing.
After a while, we both head home and I was having major trouble sleeping on Sunday.  I don’t know why.  I was up by 7 but didn’t officially get out of bed until around 8am.  I got myself together and snuggled up on the sofa with my coffee, bagel, snuggie and space heater.  That never happens!  Usually Mike is always up before me on the weekends.  I felt like a little kid sitting there.  It reminded me of those times when I was younger and Melissa and I would be the first ones up in the house.  It wasn’t long before Mike woke up and joined me.  We hung around until it was time to go to his cousin’s house for Hanukkah.
I didn’t take any pictures of the party because no one knows I have a blog and I’d like to keep it that way, at least for now.  There was a ton of food and desserts that were put out.  I ended up sitting at the “girls table,” for a while.  I had really great conversations with Mike’s relatives who will shortly be becoming mine.  It was truly a special time sitting there and taking in moments with them.  It made me happy that I was able to connect with his relatives and that especially his two girl cousins and I have become good friends over the years.  It’s comforting since I don’t have a big family at all.
After the party, I picked up Melissa and before we knew it, we were baking like crazy!  It was the first time that we made cookies using the KitchenAid mixer!  Let me tell you, that thing is a god send!  It works miracles!  It cut the prep time of everything completely in half!  We were able to accomplish so much in a short period of time!  We had so much fun in the kitchen while Mike was sitting in the living room watching the Eagles game and being our taste tester!  I think he tried every single thing we baked and then some.  As I was standing there, I was truly taking in every single moment because in that moment,  I felt so happy.  The happiest I’ve been in a long time.  :)

Do you see the random snowman on the left?!  We didn’t have a snowman cookie cutter.  It just turned into one!  I thought that was pretty funny!  So those are the results from Bakefest 2011!  I think we were pretty successful.  Everything tastes great.  I might make gingerbread men one day after work this week.  I haven’t decided for sure yet if I will or not.  Did you bake anything this weekend?  What is your favorite holiday treat to make?
Before we knew it, our baking was done and it was time for dinner.  I visited with my mom for a little and then Mike and I picked up dinner.  I had portobello mushrooms and zucchini on a pizza.
I haven’t had very many vegetables this weekend.  So I’m looking forward to dinner tonight to bring some roasted veggies back into my life.  That is for sure!  That was my weekend.  I had a good one and I’m glad that I spent time with those people who I love.  That is definitely what the holidays are about.  I hope you had a wonderful weekend as well!
Before I go, I just want to remind you that if you haven’t already entered my giveaway, please do so by tomorrow morning at 7am!  This giveaway is a for a free 1 pound bag of coffee from Grand Kaffe Coffee!  Don’t forget to enter!

  1. It sounds like you had such a wonderful weekend. That’s definitely what this holiday time is all about, spending time with people you love and soaking in the moments. Sometimes the most ordinary ones end up being the most extraordinary :-)

Those cookies look AMAZING! The chocolate crinkle ones must be amazing!! I’m going to a friend’s house later today for our annual holiday get-together and it’s our tradition to always bake cookies together. Can’t wait!

I hope you feel better soon!! Definitely go to a doctor if you think it’s getting worse. I wanted to hug mine when I went and she gave me prescription cough medicine – such a help!

    • I totally agree with you. Those are the types of moments that will stay with you forever. :)

Thank you! They were really good! They kind of taste like brownies! I hope you had fun baking with your friend. It sounds like fun!

Thank you! I definitely think I need to go. I keep putting it off. I hope you are feeling better!

  2. I had a bakefest this weekend too! I still have a few more batches to bake before Friday. I also finished wrapping all my gifts which is another thing I was able to check off my preholiday to do list.

I want arirang sushi so bad!

  3. I’ve been baking a lot lately too. As soon as I bake them, I save a few for me and Chris and then ship the rest out to friends and family. I love this time of the year.

I agree, having a kitchenaid mixer saves so much time. I recently got one after the wedding, I love it.

  4. Aw what a fun weekend! I LOVE those pretzel m & m things! They are sooooo addictive.

Red robin – ugh I could go for that right now! I’m on liquids until tomorrow and now all I want is a whiskey river bbq sandwich : (
