Good Morning! Happy Tuesday! I hope your week is off to a great start. My week is moving very slowly so far. Yesterday felt like the longest day in the history of the world! I’m not even sure why. I was really busy at work but I felt like every time I looked at the clock, time had just stopped. It was quite odd. I’m hoping today goes by much quickly. I think it will because my entire company has a meeting with the CEO this morning. I’m kind of nervous about it. He is retiring in a couple of months so I think that is what the meeting is about. At least I hope it is.
Anyway, last night for dinner, I knew that we had to eat something other than Italian food since our entire weekend was filled with it. We had some ground beef that we got on Sunday in the fridge and I was thinking Mexican food. Originally I was going to make tacos. Well Mike ended up making tacos but I decided on a Quesadilla composed of random things that surprisingly went well together!
I cooked the ground beef with a packet of taco seasoning. Then I sautéed some mushrooms and fresh spinach. I toasted a tortilla and then placed the spinach and mushrooms on top. I then added the ground beef mixture and placed some cheese on top as well as another tortilla. I was nervous how it was going to take combining Mexican food with spinach and mushrooms but it worked quite well! I was missing guacamole and sour cream. But that is okay. I had enough chips and salsa to almost ruin my dinner. At least I have some leftovers for lunch today.

I just tried Indian food for the first time a few months ago and loved it. It was definitely on my list of cuisines to try. I love mushrooms and spinach with my Mexican food! A lot of times at restaurants, when I order vegetarian vesions of things, they come with mushrooms and spinach, so I don’t think it’s that uncommon at all. Sounds delicious!

I really want to try Ethiopian food, I’ve heard good stuff about it. I like Indian food, but Tommy isn’t a big fan so we don’t get it too often.

I love indian food! I first tried it a couple years ago. The best way to first try it is to go to a GOOD buffet. That way you can taste different things and see what you like.
