Hi there! Happy Thursday! The slow week is almost approaching Friday! I’m glad to hear that I am not the only one who things that this week is moving by so slow. I really enjoyed reading where all of you would like to register for your weddings. I have to agree with you guys on Crate & Barrel. That is such a nice store and they have great things! I’ve only been in the store one time because the closest one is like 45 minutes away. I wish they would build one closer to me because they have so much stuff there. We might have to go there and browse one day.
Lately, I’ve felt like I’ve been in a cooking rut. I haven’t posted a new recipe that I have tried in a while. I haven’t made a new recipe in a while. So last night was the night! I was determined to try a recipe that I found that I thought sounded great! Funny story about this recipe. At work, I had sent some things to the printer to print. I walked up to the printer to retrieve my items and I saw a recipe sitting on the printer. So I quickly read it to see what it was for and then I looked it up myself. I thought it sounded great! I have no clue who printed out the recipe but I’m sure glad that they did because I ended up making a delicious dinner from it!
Undone Stuffed Pepper Casserole (adapted from this Kraft Foods recipe)
Ingredients:
Heat oven to 350 degrees.
Brown ground beef with peppers and garlic in large skillet; drain.
Stir in rice, spaghetti sauce and 3/4 cup cheese.
Spoon into 2-qt. casserole; top with remaining cheese.
Bake 25 min. or until heated through.
*Just a side note from this recipe that I mentioned in the ingredients. I only had 1 cup of brown rice to use and it was absolutely plenty for Mike and I. Plus, it made leftovers. So if you don’t want an overload of rice, I think 1 cup of plenty.
This recipe definitely cured my cooking rut! It smelled up the house so nicely. It was such a warm and comforting meal. It was quick to prepare. The longest part was when it was baking in the oven but that just gives you time to do other things around the house. It was absolutely delicious! It really did taste like a stuffed pepper but just in a casserole form. Mike and I were in agreement about how much we loved this dinner. I can definitely see this becoming a staple meal in our home.
Oh, and it leaves a ton of leftovers! We have dinner for tonight and I possibly have lunch for tomorrow. I love meals like that. That is why I am a fan of casseroles. There is nothing like leftovers especially if it’s from a meal that you like.
Do you typically eat leftovers or do you just get rid of them? Do you have any dinners that you make weekly because you like it so much?
I used to have dinners that I would make every week because I liked it so much but I think I got tired of it so I stopped. I try to switch things up but some nights I just want dinner to be simple because of a long day at work. I do enjoy cooking dinner from scratch though. I find it relaxing and the perfect end to a stressful day.

I did this the other day too! Not exactly the same, but I mixed the peppers in and then baked over cabbage and rice – wish I had all those grilled veggies you made – looks yummy

And I LOVE leftovers. Most every meal we make it intended for 4 people so we eat half at one meal and the other half the next day.
