A Ruby Kind Of Thursday…

Good Morning!  Happy Friday!!  Yesterday felt like my Friday because I had off from work.  I’m back at work today though.  I’m working a half day today because like I mentioned the other day, Mike and I are having another engagement session done.  I’m really excited for this one because I know what to expect and I am going into this session being me.  Before, I felt like I was trying too hard for the pictures.  This time I just want it to be natural.  So I’m excited!

Let’s pick up where I left off on Wednesday!  Wednesday night when I got home from work, I didn’t really feel like cooking something extravagant.  So Mike and I went through the freezer and found a package of Trader Joe’s Sweet Potato Gnocchi that we forgot about!  This is Mike’s absolute favorite thing from Trader Joe’s.  He talks about it all the time!

The only thing about this I hate is the packaging!  I wish they would change it.  It takes forever to cook because it comes out of the package in a huge block.  It would be easier if it was in a bag.  That is just my opinion though.  I roasted some kale, string beans and zucchini to go along with the sweet potato gnocchi.

I have to say that I am a fan of this also.  I really want to try making gnocchi at home myself.  I have a recipe saved that seems pretty easy and a ton of potatoes.  I would love to try making it from scratch this weekend.  I hope I will have time! 

Yesterday morning, I woke up pretty early and brought Melissa to my house so we could relax together before her procedure.  We spent the morning talking, and watching some tv curled up by my space heater.  I love that thing!  I still refuse to put the heat on it especially since it will be 80 degrees sometime this weekend.  The space heater really heated up the room though. 

We finally left for her appointment.  They made us literally sit there for over 2 hours!  I couldn’t believe it.  It would have been a different story if it was just a doctor’s appointment but this was a procedure, she needed to be put to sleep for!  I was pissed!  I said something to the receptionist and she could careless.  It was awful.  Her appointment was at 11:30am and we got there way before and didn’t end up leaving there until after 3pm.  I felt really bad for Melissa.  It wasn’t right at all!

After, we stopped at Starbucks so that we could both have some coffee.  It was delicious!  They brewed the coffee perfectly.  I got my usual soy misto with sugar-free vanilla syrup.  It’s pretty much coffee with steamed soy milk and sugar-free syrup.  I like it.  Plus, its gentle on my stomach.  We then ventured over to Saladworks.  I didn’t take pictures.  Melissa wasn’t feeling well so we went to her house to relax for a while.  She layed down with Oliver by her side for a little while. 

We really wanted to pick Apples.  So we went over to the orchard where we picked them last year only to have a nasty woman snap at us and tell us we were too late.  I felt really bad because we really wanted to pick them.  We bought a few in the store and I picked up some apple cider donuts.  We will pick apples another time at a different orchard.  The woman didn’t need to be so rude to us!  Some people have really bad customer service!

We were near Trader Joe’s so we decided to stop in and take a look around.  They were giving out samples of veggie burgers so I tried one.  I shouldn’t have because I fell in love with a new product to me that I grabbed off the shelf and took home. I cannot wait to eat this for lunch this afternoon!

It appears to be Indian inspired.  I’ve never had Indian food but I am dying to try.  Melissa said if I really liked this burger than I would fall in love with Indian food.  I definitely need to get to a place to try!  There is one place near my house and it’s always crowded.  I’m thinking I should try it sometime!  Do you like Indian food?  Do you enjoy trying foods outside your comfort zone or do you typically stick with the same types of food?

After Trader Joe’s, we walked around the mall for a little bit.  We walked into one of our favorite stores, Williams and Sonoma!  They had samples out there.  Ahh, I was in heaven.  I love that store so much. It’s a shame it’s so darn expensive!  I wonder if it would be bad to register there.  Hmm..

We decided to go to one of our favorite restaurants for dinner, Ruby Tuesday!

For my meal, I ordered a burger with Swiss Cheese and Portobello mushrooms with green beans and mashed cauliflower.

Our experience there wasn’t as good as it was last time.  Our food came out SO greasy!  That is such a turn off.  I couldn’t even hold the burger because of how greasy it was.  The string beans were swimming in grease.  Ick!  I cannot eat like that.  It irritates my stomach.  I was kind of annoyed by that.  I think they were having an off night!  Plus, they were out of spaghetti squash.  We were both looking forward to having some.  Oh well.  Better luck next time.

After dinner, I went back to Melissa’s house for a little bit and then I went home to prep myself for our pictures today.  I had to polish my nails and straighten my hair.  I did it the night before so I could sleep on it and flatten it out. I didn’t want my hair pouffy for pictures.  That would just not be good. 
What are your plans for this weekend?  Anything fun planned?!  Well, I told you my plans for tonight.  Tomorrow, I start orientation for my part-time job.  I haven’t mentioned that I picked up a part-time job.  I did.  I got hired like two weeks ago.  I really need extra income since they cut back on overtime at my full-time job.  So I had to pick up a second job.  I’m not happy about it but I have to pay the bills.  I’m kind of nervous about it actually.  I’m hoping that it works out.  It will just be on weekends. I’m not sure I want to get into what it is just yet.  I think I’ll wait until my orientation and then decide if I want to mention it or not.  I’ll give you a hint.  It’s food related and no, I’m not going to be waitressing.  That is all I will say!  After orientation, we are going to Mike’s Aunt’s house for a holiday dinner.  That is as far as my weekend plans go.  Nothing too exciting!

  1. Good luck on your engagement photos! I hope Melissa is doing well after her procedure. I absolutely hate waiting at the doctor’s office. It drives me nuts, especially when the doctor charges you a fee when you miss an appointment. It’s like their time is valuable, but yours isn’t.

    Those veggie burgers you got are GOOD! I love Indian food and trying new foods in general. Tommy says that he’s tried more new food in the year that we’ve been together than in the previous 20 years of his life.

    • Thank you so much! :) I totally agree with you! It’s not right at all. You shouldn’t have to wait longer than 30 minutes to see a doctor. If they are running that far behind, then they should call you. It’s not right at all, especially if you take off of work or leave work early to go to the appointment.

      That is awesome! :) I think Mike feels that way too. He keeps trying things he never would have if we weren’t together. It’s fun trying new foods.

  2. Okay, that’s just awful that they made you wait so long for Melissa’s procedure. It’d be bad enough for a regular appointment, but when something like that is being done, two hours is absurd and unfair. I hope she’s doing better. Starbucks and Saladworks sounds like a perfect pick-me-up. I often get that combo, too — so excited to find locations that are right near each other :)

    • I totally agree with you! It was awful. I actually called the doctors office to complain because she had to pay a pretty large copay. So I’m trying to see if she can get half of it back. It’s not right. Yes, I agree! There is nothing better than Starbucks and Saladworks is good too :)

  3. : ( That happened to me before – waiting two hours for a procedure. Made even more fun by the need to be fasting! I was able to stay calm though somehow….guess you get used to it!

    I’m not sure about indian food, either…
