A Cracked View…

Hi there!  Happy Friday!!  I’m glad that everyone likes the flowers that I am interested in having at my wedding.  I think the colors are so vibrant and cheerful.  I am and have always been a big fan of the color purple.  I don’t know what is about the color.  I just love it so much.  Plus, it’s my good luck color.  I would always have some form of purple on me or with me when I used to go in for auditions back when I was really big into singing and acting.  Having something of that color, I felt, would make me perform better.  I don’t know if it worked or not but needless to say, I just really like that color.  What is your favorite color?

Yesterday, I mentioned that I was going to be trying a new recipe for dinner.  I was really excited for this recipe too.  I had dvred an episode of the Rachael Ray show that goes on during daytime hours.  She made Cheddar Pumpkin Macaroni and Cheese.  It looked amazing and she kept ranting and raving about how great it was.  I love pumpkin and macaroni and cheese so I thought if you put them together it might be amazing.  I have tried a pumpkin pasta recipe last year and I hated it and vowed to never make something like that again.  Here I was getting ready to make pumpkin mac and cheese. Makes sense, right?

So I get everything together and I boil the pasta and get that cooking.  Then I start on the sauce.  I absolutely HATE nutmeg!  I will not eat anything that contains that spice in it.  I don’t know what it is about the flavoring but I really dislike it.  So I immediately omitted that from the sauce.  Is there a spice that you absolutely despise?  I started tasting the sauce as I’m going along, and I used my last can of pumpkin by the way making this!  So sad!  It seemed to be okay.  I put in the rest of the ingredients and tried it again.  Fail!  It was terrible!!!  I just can’t get over the way pumpkin and cheese tastes together.  They just do not go together in my opinion.  I am done with making pumpkin pasta dishes!

I had a pumpkin ravioli dish at a restaurant before that was excellent.   I think it’s okay in that form but as a sauce?  No way!  Take my advice, stay away!  Luckily, I didn’t end up combining the sauce with the pasta.  If I did, then it would have been a complete disaster.  So I got myself together, and looked in the pantry and noticed some delicious Alfredo sauce.

Then I remembered that we had some frozen Trader Joe’s turkey meatballs.

So I took everything and put in a pan together and let the flavors combine and the meatballs thaw out.

This was just the meal I needed after that cooking disaster!  It definitely made up for it.  I just feel horrible about wasting all of those ingredients.  I used my last can of pumpkin and half a Dogfish Head Punkin Ale.  GR!  I hope I can find more canned pumpkin.  I looked during the week and the shelves at the store were bare.  I hope this isn’t another year where you can’t get canned pumpkin.  Oh well.

I have a very busy weekend in store for myself.  What are you doing this weekend?

I mentioned a couple of weeks ago, or maybe a month ago now, that while driving on the Turnpike to work, a rock hit my windshield.  Well, it was determined that the crack was too large to repair so my entire windshield needs to be replaced.  Keep in mind, I just got this car brand new at the end of March!  I really don’t have good luck with cars.  Anyway, I had to wait until I had money to pay to get a new windshield cause they are expensive!  The woman at the glass place is cutting me a deal for a mistake they made when they first were determining if it could be repaired or not.  She is saving me a ton of money!  So I am finally getting a new windshield tomorrow and it’s at the perfect time.  The crack is getting bigger and bigger as we speak.

I don’t know if you can tell or not by the picture.  It’s a bad picture, I know.  The crack started on the passenger side and it slowly moved up and over toward the center of the windshield.  It’s very distracting when driving.  I’m just happy to get it repaired before the first frost and ice because all I need is for the entire thing to shatter!  Not good!

Then Saturday afternoon, I’m going to David’s Bridal with Melissa and my mom.  They are going to try on some dresses and then we are going out to dinner.  I’m very excited!!  Then at the beginning of November, the rest of the bridesmaids will go to get fitted for the dress.  Yay!  On Monday, Melissa and I are going to a Bridal Show!  I’m pretty excited about that.  It will be both of our first times going to a show!  I’m hoping to win a honeymoon there!  Do they even do that?

I’m also looking to get some part-time work because what I’m doing now, it’s just not cutting it.  I’m having money issues and they cut back on overtime at my work.  So it’s a big pay cut.  I’m hoping something comes up soon!  Keeping my fingers crossed!!  Know of anything, please pass it along!  :)

Alright, time for me to wait for the free blueberry muffin to get here!  It’s my favorite part of being at work on Fridays.  Have a good day!  :)

  1. Blech! I can’t imagine a scenario when pumpkin, cheese, and pasta go well together. It stinks to waste ingredients like that but it happens to all of us!

    As a rule I make nothing Rachel Ray cooks haha, I have this weird hatred of her. Giada’s my girl, though.

    • Yeah, those ingredients just do not mix well together. I totally agree.

      Hahah! I don’t like Rachael Ray either! I met her at a book signing a couple of years ago and she was nasty! She is not personable at all. She is very fake and acts that way for the camera. She is rude to her fans. I love Giada! I also met her at a book signing and she was as nice as could be! :)

  2. I saw that recipes on TV and I was intrigued by it, but something seemed off in it. When I think pumpkin, I think sweet and that’s usually how I use it in my cooking.

    My windshield has a crack too! Its still really small but its steadily getting bigger.

    • I totally agree with you! I’m done with trying to put pumpkin into a savory dish. It’s meant to be sweet!

      Definitely keep a watch on it! If it’s that small, you might be able to get it repaired for free from your car insurance company.

  3. Have fun at the Bridal Show, I’m sure i’ll be sooo exciting!
    I’ll have to try this recipe, I recently got TJ’s turkey meatballs (LOVE TJ’s) and hubby LOVES any type of pasta with alfredo sauce, so I’m sure it’ll be a hit! ;-)

  4. Ugh I hate recipe fails. I had one earlier tonight I am hoping to rectify in the morning. I completely forgot about your windshield but I am glad you’re getting it fixed on the cheap!
