Hi there! Happy Friday!!! Did this week go by slow or what?! It felt like torture how long it was. I hope today goes by quicker than every other day this week. I think it’s felt like it’s gone by so slow because of the weather. It’s been quite miserable the past few days here. Last night, I think was the worst weather of all! There was lightning, thunder, heavy rain and hail! I saw huge pieces of hail coming down. It was crazy! The lights were flickering. I thought for sure I was going to be stuck in the dark and miss Big Brother. Haha. Thankfully, the electricity stayed on! I hope we are done with this rain soon. I hate this type of weather. It makes you just want to lounge around all day and watch movies or read a book.
I was very productive in the kitchen yesterday. I was cooking up a storm when I got home from work. I was really excited because I had two recipes that I wanted to try out last night. One was for dinner and the other was for dessert! Let me tell you, they were both successful! I’m really happy about that!
Peach Chicken (adapted from Kristin of Iowa Girl Eats blog)
Serves 2 people
Ingredients:
This Peach Chicken was phenomenal! It had such a unique flavor and was almost Asian inspired! Kristin really did a great job creating this recipe! I have made quite a few of her recipes and have never been disappointed. This one is no different! I like how tender the peaches were from being cooked in the sauce. The sauce had a little tang to it. I really liked it a lot! Plus, this wasn’t difficult to make at all!
Now it was time for dessert! I saw a recipe on Jessica from How Sweet It Is blog earlier on in the day and I knew I had to make it for dessert especially since I had the ingredients waiting for me at home!
Oatmeal Peanut Butter Squares (adapted from Jessica’s blog)
Makes 9 Squares
Ingredients:
1 cup whole wheat pastry flour (***I did not have whole wheat pastry flour so I used all-purpose flour and it seemed to work perfectly)
1 cup old-fashioned oats
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup brown sugar
3/4 cups creamy peanut butter
1 tablespoon vanilla extract
1/2 cup milk (***I used Soy Milk)
1/3 cup mini chocolate chips (***I used regular sized chocolate chips because I didn’t have mini)
Directions: (Keep in mind, I do not have any type of mixer so I mixed everything by hand and it was actually pretty easy. It might have been easier with a mixer though.
)
Preheat oven to 350 degrees.
In the bowl of an electric mixer, add peanut butter and sugar and mix on high-speed until fluffy, about 2-3 minutes. Add in vanilla extract and mix until combined.
Add in flour, oats, salt and baking soda, mixing on medium speed. The dough will look crumbly and you want the peanut butter mix to be broken up into clumps. Add milk with the mixer on low-speed, and mix until a dough forms. Fold in chocolate chips.
Make sure dough is completely combined, and roll it into a ball with your hands. Place it in the middle of an 8×8 baking dish, pressing it to fit. Bake for 18-20 minutes, or until set and golden on top. Let cool completely, then cut into 9 squares.
This was delicious!! I loved the combination of the oats, peanut butter and chocolate chips! This makes for the perfect dessert! It’s pretty light and fluffy. It has a lot of flavor. I probably could have eaten the entire pan of them! They are that good! I promise you will like them, if you make them. Yum!
After all of that cooking, I was exhausted. It was time to relax and watch tv for the rest of the night. Now, here I am back at work. I’ll leave you with some questions for the day!

The storms last night were insane!! We didn’t have hail here, but the lightning bolts were so defined that you could actually see their complete zig-zag formation. Creepy!!

I usually cook more during the week and take it easy on the weekends.
