Hi there! Happy Wednesday! This week sure is flying by. I’m glad that it’s going quickly. Yesterday, I ended up leaving work around 2pm. I tried to stick it out the rest of the day but I was just feeling too awful. I kept sneezing, coughing, and blowing my nose like crazy! I’m sure I probably pissed off all of the people who sit around me.
I felt bad. I should have really stayed home yesterday but I’m stubborn. I’m still feeling pretty crummy today too. I guess it’s going to take a couple of days for the antibiotic to kick in and start working. I hope it starts working soon! I can deal with my ears and throat bothering me. The thing I cannot deal with is a runny nose! I hate that with a passion!
I drove home from work yesterday in a massive rainstorm! It was terrible. I could barely see how to drive. It was like that my entire hour-long drive home. It was not fun! Once I got home, I layed down and watched tv the rest of the afternoon. I finally decided that it was probably time to start on dinner since Mike was going to be coming home from the gym soon. I saw a recipe two weeks ago on Courtney from Sweet Tooth Sweet Life’s blog that I knew I had to make!
BBQ Chicken Garbage Bread adapted from Courtney’s recipe
Ingredients:
Ground Chicken
BBQ Sauce
Shredded Mozzarella Cheese
Pizza Dough
Salt
Pepper
***Courtney also used garlic and onions. I omitted this beceause I didn’t have any onions in my house**
Directions:
Preheat the oven to 350 degrees.
Roll out the pizza dough and place it on a baking sheet which has been sprayed with cooking spray.
Next add the ground chicken to a skillet and cook until there is no pink. Add salt and pepper. Then add about 1/3 cup of bbq sauce. You might need to add a few drops more to coat all of the chicken.
Then place the ground chicken on the pizza dough. Top with some shredded mozzarella cheese and a little bit more bbq sauce.
Roll the pizza dough up like a jelly roll and pinch the sides in. Cut three slits on the top of the garbage bread so that it doesn’t explode in the oven. Bake for 30-35 minutes or until golden brown.
Thank you, Courtney for posting such an awesome recipe! I had never even heard of garbage bread until I saw it on her blog. I’m really glad that I made this for dinner. It was the most comforting meal for a day when I was not feeling well. The pizza dough got really flaky and it was great. My only complaint was that I should have added a lot more bbq sauce. I couldn’t taste it all that much. Other than that, it was really good! I think I’d like to drive a buffalo chicken one the next time I make it. I think that would taste really good!
What is your favorite type of comfort food? What comforting thing do you like to eat when you are feeling sick?
The rest of the night, Mike and I watched tv. Of course we watched Pretty Little Liars. I really don’t know what is going on with that show lately. It’s been very weird. I still like it though but it’s weird. ABC Family is coming out with some new shows for the fall that look pretty good! I’m excited for that. I haven’t really seen previews for any fall shows that are really catching my attention. Hopefully there will be some good ones since a few of my favorite shows got cancelled. Fingers crossed!
Alright, time to get back to my pile of work. Have a good day!
