Portobello Mushroom Parmesan…

Good Morning!  Happy Thursday!  The weekend is almost here!  Today is supposed to be one of the most beautiful days so far.  Our heat wave has left.  So today is supposed to be in the 80′s and the humidity it supposed to be gone!  I can deal with the heat.  The humidity, I can’t stand!  I heard that there were bad tornadoes that went through Massachusetts!  My heart goes out to anyone affected by these storms!  This spring weather is crazy with all of these storms!

So last night for dinner, the plan was for us to use the grill.  We went outside and turn it on and sure enough it doesn’t work!  I think we are out of propane.  I hope that it is all that is wrong with it.  We just bought the grill last summer.  So I’m thinking we just need to fill the tank.  So we moved our bbq indoors and used our Rachael Ray grill pan!

Over the weekend, I bought Portobello mushrooms because I was interested in trying them.  I wasn’t sure what to do with them.  So I seasoned them with salt and pepper and put them on the grill pan and put my thinking cap on.  Mike didn’t want to try the mushroom so he grilled himself a hamburger, hot dog and some corn on the cob.  While I was figuring out what to do, I decided to make a box of Near East Couscous.

Broccoli and Cheese Couscous

That is definitely one of my favorite couscous mixes to make.  Do you like couscous?  What is your favorite way to prepare it?

I decided to put some sauce on the Portobello mushroom and melt a slice of American Cheese on it.  Now, these pictures don’t make the mushroom look appetizing but trust me, it was delicious!!!

My creation

Yummy mushroom!

I know this really looks gross but it was very good!  The Portobello mushroom was very meaty tasting.  It was almost like I was eating a hamburger patty.  Grilling it made it soft and tender and taste really good.  I am calling my creation Portobello mushroom parmesan.  Yum!  I got a bargain on the mushrooms from the produce store too.  I got 2 huge mushrooms for $1.90!  I thought that was a deal!  I’m actually having the other mushroom for lunch today and I am really looking forward to it.  Sometimes the most random meals are the best ones!  What is the last random meal that you put together?  Have you ever had a Portobello mushroom?

I’m pretty excited about tonight!  Melissa and I are going to try a new restaurant to us that we haven’t tried before in New Hope.  I’m really looking forward to it.  I think they have a nice outdoor seating area so we might even be able to sit outside, people watch, have a glass of wine!  I’m happy about that!  :)   I really like going to New Hope.  It’s such an artsy town filled with random boutiques and restaurants and bars.  It’s a neat place to check out if you are in the Bucks County area of PA.  I like going to towns like that.  It’s fun to explore.

Alright, time to get back to work now.  Have a good day!  :)

  1. I wish I liked mushrooms! It’s the one thing I just can’t get into (that and hard boiled eggs). But i LOVE cous cous!

    • I know what you mean. I find that a lot of people don’t like mushrooms. Maybe it’s the texture? I don’t know. It’s good though. If you are feeling adventurous, you should try it! You might end up liking it. :) Me too!! Couscous is my fave!
