Good Morning! Happy Friday!!! We made it! Although this week went by incredibly fast! I can’t believe it’s already Friday! I have a ton of work to get done today because I am off from work on Monday. I have to go to the dentist and the doctor’s office. Boo! I’d rather enjoy my day off doing something fun. Instead, I am going to be tortured the entire day and then I have to come home and wait for the water company to replace a water meter inside of our home. At least I’ll be able to watch tv, movies, bake, cook, etc. I’ll keep myself entertained I’m sure! At least I won’t be working. That will be a nice break.
Last night after work, I had the leftover White Bean Chicken Chili leftovers from the other night. Let me tell you, this chili was amazing even the next day! I think they next time I will make an even bigger container of this chili so that I can freeze leftovers because this was just so delicious!
I wanted something to eat with the chili and the cornbread. So I searched my freezer. I was so excited when I found some brussels sprouts! I had been craving these like crazy! Now, what I do is I take the frozen brussels and I place them on a baking sheet that I sprayed with cooking spray. I preheat the oven to 425 degrees. Then I toss the frozen brussels sprouts in cooking spray, pepper and garlic salt. They taste exactly like fresh ones! You can’t even tell that they were frozen. They come out with the perfect roasted flavor. I love roasted veggies! I especially love roasted brussels sprouts! I can’t wait to grill veggies this summer! I grilled some last summer and they were so delicious! Melissa and I LOVE how grilled veggies taste. It really enhances the flavors.
I can’t believe I waited until a few months ago to try brussels sprouts! What was I thinking?! Mike doesn’t like them. I feel bad for our kids because I hope they will like them! But they will be the ones to tell their friends that ew, their mom made brussels sprouts for dinner. Haha. Maybe they will like it. Who knows? What is your favorite way to prepare veggies? Do you have a favorite vegetable?
So don’t even get me started on the musical episode of Grey’s Anatomy! What the hell was that?! It was just all WAY too weird for me. It was strange seeing someone operate while singing! I think it would have been a good episode if they did away with the singing. The singing just ruined it for me. It wasn’t even like Glee where they are conscious that someone is singing. It was weird! They were like operating and singing but no one realized that someone was singing. Very weird! I think this episode is going to get ripped apart today. I really wish they would have done it without music.
This morning is free breakfast Friday! I ordered my usual egg and cheese on a blueberry bagel! Love those blueberry bagels!
Yum! I get free breakfast and lunch today! Today for lunch they are providing us with a ballpark type lunch to celebrate opening day of the Phillies! They are even going to show the game! I’m pretty excited about that! Yum!

I looove roasted brussels sprouts. They’re like candy. I love all veggies though.
I havent had brussels sprouts since I was a seven year old traumatized by being forced to eat them…I want to try them now but I’m so afraid they’ll be terrible! Odd, because I’m usually pretty good about trying foods…somehow I just have a huge prejudice against them!
Aww..well I think brussels sprouts are amazing when they are roasted. Maybe trying roasting them in some garlic salt? That is how I like them
