4 Degrees & Spinach, Tomato & Mozzarella Stuffed Chicken…

Good Morning Everyone!  I can’t believe it’s Monday already!  This weekend went by way too quickly.  The entire weekend it has been unbearably cold out.  This morning when I got into my car it said it was 4 degrees!!!  4 degrees!  What the hell?!  That is entirely too cold for my liking.  As I started driving it slowly went up to 9 degrees and that is where it stayed my entire drive to work.  I really hope it gets warmer throughout the day.  Is it that cold where you live right now? 

So let’s catch up where we left off Saturday morning.  On Saturday, I ended up working 5 hours.  I left here around 1pm and went to Melissa and my mom’s house.  I picked them up and we went out shopping.  We had an amazing trip to the Produce store where we got some really great items for a great price!  Then we went to Trader Joe’s and Whole Foods.  Trader Joe’s was MOBBED!  I have NEVER seen it that crowded in my entire life.  The lines were wrapped around the store.  Every time, Melissa and I went to look at something people pushed us, got in front of us, shoved their way in.  Needless to say, not much of anything was accomplished in that store!

Then we went to Whole Foods, you will not believe this!  Peanut Butter and Company’s peanut butters are on sale for $2.00!!!!  I nearly passed out when I saw that!  I have been dying for the Cinnamon Raisin Swirl but everywhere I look it’s like $6.00 for a jar.  I snatched that off the shelf and was a very happy girl!  :)  I also found two yogurts on sale that are lactose free!  I cannot wait to try them.  That means I don’t have to take my lactaid pill with them.  Wahoo!  I also got two blueberry muffins because Whole Foods makes the best blueberry muffins, in my opinion.  Yum!

Then we went back to their house and hung out for a while and played with Oliver who just got a beautiful new haircut!  I completely forgot to take a picture of him.  I will have to take one when I see him again.  He has not made an apperance on the blog in a while. 

I went home and Mike asked if I wanted to go to out to dinner.  It was frigid outside but I still agreed.  So we went to one of our favorite restaurants, Friends!  Apparently, it’s now everyone’s favorite restaurant because it was PACKED in there and we had to wait a REALLY long time which is rare for Friends.

After a while, we finally got seated.  Mike ordered a Hoegarden beer and I went with one that is becoming a favorite of mine, Paulaner.  It tastes light and kind of fruity.  I really like it a lot.

We went with our usual appetizer of choice, the Garlic Bread Bruschetta.

As always, it was delicious!  I love the flavoring that they put on the garlic bread and it’s perfectly crispy on the outside but soft in the middle which I really like.

I decided to order Chicken and Broccoli Fettuccine Alfredo.  They have the best alfredo sauce!  Mike went with vodka rigatoni and he really loves their vodka sauce.

I really like the food at Friend’s.  You always know that you are going to get a great meal no matter what you order.  It’s hard to find restaurants like that.  :)

Yesterday, I had my Whole Food’s blueberry muffin with Pink Lady apple slices and coffee for breakfast.

The muffin was excellent!  Let me tell you, I’ve never had a Pink Lady apple before so I didn’t know what to expect.  Dare I say that this was even better than a honeycrisp?!  Yes, I am serious!  It was perfectly sweet and it just had incredible flavor that I’ve never tasted from an apple before.  These are typically expensive but I got a deal on them from the Produce store.  I am thinking I must go back there to get more!  I think the produce store hs 30% off produce on Tuesdays, so I just might need to stop and get more of these.  So good!  Definitely try one, if you’ve never had it before and enjoy different tasting apples.  :)  What is your favorite kind of apple?

After breakfast, Mike and I fixed up the house a bit.  We were finally able to put everything back in our laundry room!!  Wahoo!  We put all of my boxes away, and I straightened up our pantry.  Mike did some vacuuming and the laundry.  So we both felt very accomplished.  Our house is starting to come back together after that nasty flood.  Yay!

After cleaning the house, we went out food shopping.  Mike’s favorite!  Haha, not!  He hates going food shopping but deep down, I think he really enjoys it.  Haha!  :)  As always after our trips, I will show you some great product finds!

Special K came out with a new flavor in their 90 calorie bars!  Chocolate Chip Cookie!

Melissa told me she saw them at Superfresh and they just so happened to be on sale for 2 for $5, however I had a coupon for $1.00 off.  So I got 2 boxes for $4 total.  Not bad, considering they are normally like $3.00 for one box!  I’d call that a deal!  We ended up getting 2 boxes of the chocolate chip cookie.  So I hope we like them!  We only went to Superfresh for a few random items that we saw on sale in the ad.  We got bananas for 39 cents a pound!  What a deal!  Mike got Oreo cookies for $1.80!  We had been looking for shrimp that was reasonably priced for a recipe I am going to make this week.  We found some shrimp on sale for $3.00!  This was a major steal because everywhere else it was VERY expensive!

We did the most of our food shopping at ShopRite.  They are still having their can can sale.  So we were able to get some great deals on their canned tomatoes.  We ended up getting one can for free due to my couponing skills!  I also needed turkey sausage for an upcoming recipe.  Look at what Jennie-O came out with!

I love Jennie-O products!  The only thing that is bad is that it’s typically expensive and not on sale.  However, it was a great deal for these at ShopRite!  I’m excited to try them!  We also found something that I was shocked to see on the shelf and Mike and I both grabbed it at the same time!  I will share that item later because I brought it with my lunch today.  :)

For dinner, I was super excited because I was making a recipe that I just found that sounded incredible!  Let me tell you, this is probably one of my favorite chicken dishes I have ever made and I will most definitely be making it again in the future!

Spinach, Tomato & Mozzarella Stuffed Chicken adapted from $5 Dollar Dinners

(My changes are in bold)

Ingredients:

  • 1 box frozen spinach
  • 1 Tbsp olive oil (**I used cooking spray, not olive oil)
  • 1 tomato, diced (or 1 15 oz can drained diced tomatoes) (***I used a can of drained diced tomatoes)
  • 4 garlic cloves, crushed  (I used chopped garlic in a jar)
  • Sprinkles of dried basil, salt and pepper
  • 3-4 chicken breasts, depending on size…about 1.3 lb.
  • About 1 cup shredded mozzarella cheese (**I used less about 1/4 cup, only on my pieces of chicken because Mike doesn’t like melted cheese on chicken)
  • 1 6 oz can tomato paste
  • 1 tsp Italian Seasoning
  • wooden toothpicks
  • Directions:

    Cook the spinach as directed on the package and drain well.

    Spray a large skilled with cooking spray.  Add the well drained spinach, diced tomatoes and crushed garlic.  Add a few sprinkles of basil and salt and pepper. Saute for 5-7 minutes, or until fairly dry and liquid has steamed off.

    Pound out the chicken breasts and place into a baking dish that has been sprayed with cooking spray.

    Spoon the spinach and tomato mixture onto the chicken breasts.  Top with some shredded mozzarella cheese and roll up.  Keep in place by inserting two toothpicks through the chicken. Repeat for all the chicken breasts.

    Spoon any remaining spinach around the chicken in the baking dish.  Bake at 375 for 45-50 minutes, or until cooked through.  (***I baked it for 45 minutes at 375 and then raised the temperature to 400 degrees and baked for 9 additional minutes).

    While the chicken is baking, make some red sauce with the tomato paste. 

    Spoon the tomato paste into a small saucepan and add 2.5 cans worth of water. 

    Whisk and add Italian seasoning, salt, pepper, and basil and let simmer over low heat until the chicken is finished baking.

    Spoon the sauce over the chicken pieces.  

    Serve Spinach, Tomato and Mozzarella Stuffed Chicken Breasts with garlic bread.  Enjoy!  :)

    This chicken came out incredible!  It was juicy and had so much flavor!  The spinach mixture tasted great!  The tomato sauce came out great too!  I could have totally ordered this dish in a restaurant and spent probably about $14.00 on it, if not more.  I think I actually did only spend $5 making this dish.  It might have even been less than that!  This was just an amazing recipe!  I totally will be making this again.  Mike and I kept raving about how good it came out.  If you are looking for a great chicken recipe, try this one.  You will really enjoy it!  Yum!  Can’t wait for leftovers tonight!
