Bargain Finds & Buffalo Chicken Burgers….

Good Morning Everyone!  I hope you are having a good morning.  I’m sure some of you are still sleeping because you are off from work today.  Unfortunately, I am not one of those people.  That is alright.  I have off for President’s Day next month.  I am looking forward to a long weekend that weekend.  Let’s go back to yesterday.

Yesterday, Mike and I ran a ton of errands.  We had so much fun because we got so many good deals!   First, we went to CVS and Mike couponed for the first time and got an amazing deal!  He had coupons for Gilette deodorant and body wash.  It was if you bought a body wash you got another body wash free and if you bought deodorant you got body wash free.  The deodorant itself was $7.  So we got our coupons together and went to the register.  Mike ended up getting deodorant and 3 body washes for $8, when the deodorant was going to be $7 alone!  What a great deal!  Then we went to the Produce store.  We ended up getting grapes, a huge bag of oranges, huge bag of apples, clementines, bananas, pears, and a huge bag of little white potatoes for $13!  What a deal.  It’s touch and go getting produce from there.  You really have to inspect what you buy. 

Next stop was Target.  We got incredible deals here.  Target was having a deal where you could get two bottles of Zyrtec allergy medicine for $30.  This was amazing because Zyrtec is normally around $30 for one bottle.  Well I found a coupon for $6 off and another for $2 off.  So I ended up getting 2 bottles for well under the cost of one!  Yes!  We also found some of Annie’s Organic Products on sale for a dollar!   I got these two products for $1 each!

Mac & Cheese

I love when I spot Annie’s Organic on sale.  I would prefer to buy organic items but they are very expensive.  So when I find them on sale, I grab them.  These items for $1 are a steal!  Seriously, if you want them, go to Target before Saturday.  The new sale starts on Sunday.  We got a lot of more items for really good deals.  None of them which were interesting.  When we went to the register, I was getting annoyed because the cashier was scanning the coupons way too quickly and not paying attention and some of them weren’t going through!  Thank god, I was watching like a hawk because he didn’t scan the $6 off, or the $2 off, and I had some free coupons for Excedrin Migraine and Excedrin Extra Strength, and free tissues.  He wasn’t paying attention to what he was doing at all.  I’m glad that I caught that because all of those coupon savings ended up taking off over $20 on our bill!  It pays to coupon!

Our last stop of the day was ShopRite to get a few last-minute items that were on sale.  ShopRite is having their Can Can sale.  So I recommend if you need any canned items such as tomatoes, veggies, etc., stock up now!!!  We ended up getting Ragu sauce for 99 cents, Rotel tomatoes with green chilies were on sale for 80 cents!  The Rotel is usually on the high side so 80 cents is a bargain!  We got Cottonelle toilet paper an 8 pack for $3.99 due to coupons!  It’s normally $8.99!!!  Crazy!  I was very happy with this amazing deal that I found.  Well I have been trying to buy Emerald’s 100 calorie packs of nuts to have as snacks at work.  They are way too expensive.  I keep finding them for $4.99 at the store.  Well I saw at ShopRite they were on sale for $2.99 and I had a coupon for 50 cents off which they doubled!  So I ended up paying $1.99 for this baby!


I was so excited for this bargain!  Overall, we did amazing at the stores yesterday!  We got a TON of stuff for not a lot of money!  That makes me happy especially since we don’t have a lot to spend.

We finally came home for a bit and Mike finished cleaning out the vacuum’s and making sure they work.  We are SO lucky that none of our items were actually damaged from the flood!!!!  I am so happy!  Everything works.  Thank god!  It could have been much worse.  So I’m hoping that the fact that nothing is damaged will speed up this process and we can be done with it. 

For dinner last night, I decided to make a recipe that I saw on Jessica’s blog, Buffalo Chicken Burgers.

Buffalo Chicken Burgers (adapted from Jessica’s recipe)

*my changes in bold*

makes 4-6 burgers (I ended up making 5)


1 lb ground chicken breast
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 tablespoon italian seasoning
1/4 cup buffalo wing sauce
1/2 cup parmesan cheese (**I used a little less than 1/2)
2 ounces sharp cheddar cheese  (**did not use cheddar cheese, placed a slice of american cheese on my burger)
bacon ranch dressing + buffalo wing sauce for topping (**did not use ranch dressing, just added a little wing sauce on top of the burger)
4-6 whole wheat buns (**we used Pepperidge Farms Deli-Flats)
Preheat grill or skillet. (**I preheated the oven to 450 degrees)
In a large bowl combine ground chicken, salt, pepper, italian seasoning, parmesan and buffalo wing sauce.  Mix until just combined.  Form into patties.
Grill or pan-fry patties until brown on both sides and cooked through, about 8-10 minutes.  (I baked them at 450 degrees for 20 minutes).
In the last 2 minutes, place 1/2 ounce of cheddar cheese on each burger.  (**I placed a slice of american cheese on mine)
Place burgers on whole wheat buns (**deli flats) and top with a drizzle of bacon ranch and buffalo wing dressing.  (**I did not use ranch dressing.  I drizzled a bit of buffalo wing sauce on top).

Before I put the patties into the oven.  I sliced up some of those little white potatoes we picked up from the Produce store.  I sprayed them with cooking spray and tossed them in pepper and garlic salt and roasted them in the oven with the chicken burgers.

I also steamed up some broccoli and cauliflower to serve as a side dish.

Let me tell you, Jessica’s recipe was a winner!  This burger was delicious!  Mike even ate two of them, he liked it so much!!  He normally really likes ground beef.  So I was nervous about using ground chicken.  We both loved it.  This is definitely going to be made again.  The only thing I would do differently, is possibly omit the parmesan cheese.  I’m not a huge parmesan cheese fan.  It did add some good flavor to the burgers.  I’d be interested to see what it tastes like without it next time.  Overall, a delicious home cooked meal!  I missed that. 

The roasted potatoes were amazing too!  I think the little white potatoes taste better roasted than the regular Yukon potatoes.  I’m a big fan!  Plus, they are healthier because they aren’t fried or greasy.  Yummy!

After dinner, we relaxed and watched the Golden Globes until I started passing out and went to bed by like 10pm.  I should have went to bed at 9pm when I began falling asleep.  I am so exhausted.  I hope I can stay up today.

  1. These burgers sound great. Who doesn’t love buffalo chicken and burgers? It’s the best of both worlds.
    I loved the Golden Globes. I thought Gervais was pretty insultive but that’s my favorite kind of humor.
